how likely is it that your teeth will grow into the roof of your mouth without this appliance?

Obviously there is a need for lower jaw movement. The jaw may not be extended out enough for the upper to occlude correctly. It's an appliance that stimulates the growth by slight pressure. Any time you have questions just ask your dentist or orthodontists, that is what they and their staff are there for. You aren't expected to know all the different appliances, how they work, and why they are needed. If it helps you, write your questions down so they don't slip your mind when your at the dentist office. Check this site for some information on this and other appliances used in ortho.
