HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake
Ingredients:
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING(recipe follows)
Directions:
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.
VARIATIONS:
ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.
THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.
BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.
CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING
1 stick (1/2 cup) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

INGREDIENTS
1 cup white sugar
1 cup butter
1 cup water
1 teaspoon instant coffee granules
16 (1 ounce) squares semisweet chocolate
8 eggs
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar
1)Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch springform pan.
2)Heat white sugar, butter, water, coffee and chocolate in a 3-quart saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Beat in the eggs and pour into the prepared pan. Batter is very thin. If side and bottom of pan do not fit tightly, line the pan with foil.
3)Bake at 350 degrees F (175 degrees C) until a wooden pick inserted in center comes out clean, about 45 to 50 minutes. Cool completely. Remove sides of pan. Cover cake with plastic wrap and refrigerate until chilled, at least 4 hours.
4)Remove plastic wrap. Beat whipping cream and confectioners' sugar in a chilled 1 1/2 quart bowl until stiff. Garnish top of cake with whipped cream and, if desired, whole almonds. Refrigerate any remaining cake

CHOCOLATE CAKE

In a large bowl cream together margarine, eggs, sugar and cocoa until fluffy. In another bowl, sift together flour, baking soda and salt; add to butter mixture. Beat in milk and vanilla extract. Stir in boiling water (batter will be thin). Pour batter into prepared pans. Bake at 350 degrees for 25 to 30 minutes or until wooden toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pans to wire racks. Cool completely.
CHOCOLATE FROSTING:
1/2 cup margarine or butter, softened
1 3/4 cup confectioners sugar
1/4 cup Hershey's cocoa
1 teaspoon vanilla extract
3 Tablespoons cold water
Cream all ingredients together until spreading consistency.

1/4 cup dairy sour cream
Directions:
1. Heat oven to 350°F. Grease three 9-inch round baking pans. Line bottoms with wax paper; grease and flour paper. Mix cocoa with boiling water in small bowl; stir until smooth. Set aside to cool.
2. Beat butter and sugar in large bowl until fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Gradually add cocoa mixture, beating well.
3. Stir together flour, baking soda and salt; add alternately with milk and sour cream to butter mixture, beating until blended. Pour batter into prepared pans.
4. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes. Remove from pans to wire racks; carefully peel off wax paper. Cool completely. Frost as desired. 10 to 12 servings.

CHOCOLATE CAKE
1 cube margarine
1/2 cup vegetable oil
2 cups sugar
2 cups flour
2 eggs
2 tablespoons cocoa(heaping)
1 cup water
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk or sour milk
1 teaspoon vanilla
In a sauce pan add margarine,oil,cocoa and water. Bring to a boil for 2 minutes and remove from heat. Mix sugar,flour,soda and salt in a mixing bowl. Combine dry ingredients with eggs and buttermilk. Add cooked mixture and blend on medium speed for 2 minutes. Add vanilla. Bake in a greased and floured 9 x 13pan ate 350 for 25-30 minutes.(or until tooth pick comes out clean)
NEVER FAIL FROSTING
6 tablespoons margarine
6 tablespoons milk
1 1/3 cups sugar
1/2 cup semi sweet chocolate chips
5 large marshmallows or 1 heaping cup miniature marshmallows
In a sauce pan combine margarine,milk and sugar. Bring to a boil rolling for 1 minute. remove from heat and add chocolate chips and marshmallows. Beat with a spoon until marshmallows are dissolved. Can be put on hot cake.

This easy chocolate cake recipe turns into a special occasion cake with its fabulous frostings: buttermilk and two toppings. One frosting is caramel or sweet milk icing, the other is chocolate fudge to make the elegant Chocolate Mountain Cake a chocolate lovers dream come true.
INGREDIENTS:
1 C. butter or margarine, softened
2 C. sugar
3 eggs
3 C. all-purpose flour
1 C. buttermilk
1/2 C. warm water
3 T. cocoa
1 tsp. baking soda
1 tsp. vanilla
PREPARATION:
Cream butter; gradually add sugar, beating at medium speed with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Add flour alternately with buttermilk, beginning and ending with flour.
Combine water, cocoa and baking soda, stirring well. Slowly add to the flour mixture, beating well. Stir in vanilla and pour batter into well-greased and floured 9" cake pans. Bake at 350 degrees for 35-40 minutes until toothpick comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely on wire racks. Spread Sweet Milk Frosting between layers, on top and on sides.
Caramel Frosting or Sweet Milk Frosting
1 C. butter
2 C. sugar
1 C. evaporated milk
1 tsp. vanilla
Melt butter in heavy saucepan over medium heat. Add sugar and milk, cooking mixture over medium heat until mixture reaches soft ball stage (234 degrees).
Remove from heat and add vanilla (do not stir). Cool for 10 minutes. Beat with electric mixer for 10 minutes or until thick enough to spread. Spread immediately on cooled cake. Then, top with Chocolate Fudge Frosting.
Chocolate Fudge Frosting
2 C. sugar
1/4 C. cocoa
1/2 C. shortening
2/3 C. milk
1 T. Kayo corn syrup
Pinch of salt
Put in heavy saucepan and bring to boil. Boil for exactly 2 minutes. Take off stove and add 1 teaspoon vanilla flavoring. Put in mixing bowl and mix about 5 minutes or until it gets thick enough to put on cake. This cake is spectacular when finished. Use 100% real flavorings to make it elegant and delicious.
