2 tsps. medium onions, chopped
2 medium zucchini\cooked, sliced
4-1/4 cups Italian style peeled tomatoes, drained and chopped
1 bay leaf
2 Tbsps. pesto pasta dressing
1/2 lb. spaghetti
2 Tbsps. grated Parmesan cheese
Combine first 4 ingredients in a heavy non-reactive saucepan. Season with salt to taste. Cover and simmer 15 minutes. Remove cover and simmer another 10 minutes until sauce begins to thicken.Discard bay leaf. Stir in pesto and set aside. While sauce is cooking, cook pasta in boiling salted water 8-10 minutes or until al dente. Drain and serve spaghetti with zucchini sauce and Parmesan.

I would dice the zucchini up in the sauce as you cook it. Seperately cook the spaghetti and then just toss it all together, with extra sauce to serve it with. Sprinkle some cheese on top.

ZUCCHINI SPAGHETTI
1/8 c. oil
1 lg. onion, sliced
4 zucchini (approximately 6 c.)
3 c. diced fresh tomatoes
1/2 tsp. salt
1 bay leaf
1/4 tsp. pepper
1/4 tsp. Italian seasoning
8 oz. spaghetti noodles
Cheddar cheese
Saute in large skillet oil and onion. Add next 6 ingredients. Simmer covered for 15 minutes; uncover and simmer 10 minutes more. Discard bay leaf. Cook noodles according to package directions. Serve spaghetti topped with cheese the zucchini sauce and a sprinkle of Parmesan.
Add chicken, shrimp or beef if you like.

Dice the zucchini and put your sauce on low, throw in the zucchini. Boil your noodles til the firmness you prefer and serve sauce with the noodles.
You can add almost any veggie to spaghetti sauce and it just makes the sauce better.

Cook spaghetti according to package directions. Heat your favorite jarred sauce. Cut your zucchini into cubes ( peel if you prefer) and add to sauce. Cook until tender. Adds great taste to your sauce. Don't add to much or it will over power the sauce, if you REALLY like zucchini, add all you want.

I would boil the zucchini until soft, boil your spaghetti until soft, then combine the three spaghetti, zucchini and sauce and simmer for a little bit until hot. Sounds good.

Just cut or shave the zucchini however you want it, steam or saute it and add it to the sauce, over the pasta; or saute the zucchini with butter and herbs and salt and serve on the side.

Maybe you could bread the zucchini and pan fry it, like eggplant parm. yum that would be good. Just use a red sauce.
Or if you perfer, maybe sautee the zucchini slices or cubes and use a white sauce.

this is a good dishes for a vegetarian you know....
Zuchini cut into a small cube 150gr
red and yellow Paprika cut into small cube 100gr
Onion finely chopped 50gr
garlic finely chopped 10gr
Fresh Tomatoes cut into small cubed 200gr
Tomato paste 1 tbsp
Dreid Herbs (Oregano r Mixed Herbs) 1 tspn
fresh basil roughly chopped 10 gr
Salt and peppers to taste
first of all sweat/saute the onion and garlic with olive oil, add the zuchini, tomatoes, and paprika stir it well.
add tomato paste to give more red colour, add the fresh dried herb, and check the seasoning, if its to dry add simmered water/stock.
Simmer for a while, add chopped basil and stir it.
if its done, toss it with your fave pasta, in this case spaghetti, but i prefer fusilli or rigatoni.

put your zucchini, onions, garlic in skillet, saute then add your spaghetti sauce, heat thru.. you can add hamburger or italian sausage.
