2 weeks before if very close to your natural color. This will give it time to fade enough to look natural in your photos.

1-1.5 weeks before if it's a drastic change from your natural color. This is enough time for the color to look natural, but not long enough for roots to show.

I would say it depends on whether you do it yourself or overpay someone else to fry your hair. I do my own dye and highlights (L'Oreal) and I would be able to do it the very day of the wedding if necessary as would any really good professional. If I were to do it 3 weeks before a special date then the roots would be starting to change.

If you've been doing your own hair for a while then you shouldn't have any problems with the colour not being correct. If you have never dyed before and you are a young bride then why on earth would you change your hair colour (that he fell in love with) just before the big day and risk it being a disaster. That's like deciding to have your first perm the day before your wedding - don't freak when 3/4 of your hair falls out!

Just be smart and stick to your comfort level - be aware that a salon colourist will do your hair great damage especially if she is adding those unnatural highlights (bleach burnt hair that'll snap off at the root)

Ask your hair dresser. I'm getting mine touched up 10 days before. My hair dresser is the only person who does may hair and is also going to do the trial run on my wedding style that day too.

I would say between 1 and 2 weeks before. That way there it has the chance to settle and it isn't over powering. And if there are any mistakes...that leaves a little time to try and fix it. I wouldn't do it any earlier because you don't want the color to fade.

If it's a color and stylist you've been using already, I'd wait until a couple days before. You don't want your color to fade! You want it vibrant for the photographs!

In fact, if that is not the case, I would start dying it that color with the same stylist and have them do it at least twice before that last time before your wedding.

I would do it atleast a couple of weeks before, you never know if something will go wrong, and you don't want that something to be the day before or the day of your wedding.

I usually dye mine about a week before I need it to look its best. WeddingChannel.com has a list of when to do what that you might find helpful.
