I'm raised in an italian household, and my parents are big on cooking. I know how to pronounce everything, but I'm not great on spelling it. But, the sauce, in my head is known as [ah-ee-OOL-ee]. What's the correct spelling? And what's it mean?

I guess something has got lost in your memory.
Don't you remember a longer name ?? BTW It was not the sauce "aglio,olio e peperoncino" ?? Mainly if your parents were from the Southern Italy it's absolutely impossible they didn't put also peperoncino in the sauce's recipe being typical of all those regions (but also in Tuscany, where I'm born and bred, we are used to add peperoncino).
As to the meaning :
olio is oil (but olive oil.....!!!)
aglio is garlic (the white one...not the pink!!)
peperoncino is chilly (the hot red quality, the best come from Soverato - Catanzaro province - Calabria region).
I read that you know how to pronounce everything and then THAT'S ALL FOLKS.

PASTA AGLIO E OLIO (GARLIC AND OIL)

1/2 c. olive oil
3 garlic cloves, minced
1 lb. pasta (spaghettini, vermicelli, capellini, or other thin pasta)
2 tbsp. fresh parsley, chopped
4 basil leaves, torn
Freshly ground pepper
Grated cheese to taste

Heat oil in a small saucepan over low heat and very gently saute garlic until golden brown. Cook pasta al dente. Pour into large preheated serving bowl. Toss quickly with garlic and oil mixture. Add parsley, basil, pepper and grated cheese. Serve immediately. Serves 4-6.

"aglio e olio" (garlic and oil)
aglio = uh (u like in "under") lee-oh (actually, "gl" sound is just similar to "l", but's very hard to explain in written form to an English speaking person), stress on "a"
e = e like in "bed", but with grave accent
olio = oh-lee-oh, stress on first "o"

Hi there!

L'aglio (garlic) and olio (olive) is the name of the sauce!
Isn't it yummy!! One of my mom's favourite recipes!!
