My wife and I experimented with sauces for hotwings and came up with this....this is our friends and family's favorite
HOTWINGS
4 pounds chicken wings
4 tablespoons Cajun seasoning
1 (5 ounce) bottle hot sauce
DIRECTIONS
Rinse wings in cold water and place on baking sheets. Generously sprinkle Cajun seasoning on both sides of chicken, then dash all with hot sauce (enough to cover wings, without leaking off baking sheets). Refrigerate for 3 hours.
Preheat oven to 400 degrees F (200 degrees C).
Bake chicken in preheated oven for 20 minutes. Turn and bake for another 10 minutes, or until chicken is cooked through (juices run clear). Serve with ranch salad dressing, if desired.

These Buffalo Wings are marinated in a sweet, flavorful marinade that keeps the chicken moist and gives it a great flavor. Heat is provided by a habanero chile that requires care when dicing.
INGREDIENTS:
24 chicken wings
1 cup pineapple juice
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
4 cloves garlic, minced
1 habanero chile, diced
1/2 teaspoon ground allspice
salt and pepper to taste

Buffalo Chicken Wings
Let your palette fly away on wings of fire - easy, spicy buffalo wings
24 chicken wings
2 quarts vegetable oil for deep frying
4 Tbs butter
1 Tbs distilled white vinegar
5 Tbs hot pepper sauce
salt and pepper to taste
1 In a large skillet or deep fryer, deep fry chicken wings in oil until done, about 10 minutes. Remove chicken and oil from skillet/fryer, drain oil and reserve chicken.
2 Melt butter/margarine in skillet, then add vinegar and hot sauce. Season with salt and pepper to taste. Stir all together. Add cooked chicken to sauce and stir over low heat to coat. The longer the wings simmer in the sauce, the hotter they will be. Serve warm.

Melt butter, add honey, garlic and seasonings. cook on med/low until thickens a little.(more it thickens, the better it coats wings).add the franks, and more cayenne if you want or crushed red pepper. makes alot but keeps well and can be used for many things.

Everyone loves mine. You can make it milder if you don't want it really hot. we like it hot!
1 cup franks red hot sauce (important)
2 tbsp butter
1 clove garlic, grated or minced
1/4 tsp cayenne
1 tbsp crushed red pepper
leave out last 2 if you want mild. heat all in small saucepan on medium until bubbly.
