There is a recipe I use from that "Top Secret Recipes" book that mimics the ribs from Tony Romas... it's close... and oh so good... they even give variations on if you want them spicy or sweet...

1. Often when you buy ribs at the butcher counter, you get a full rack of ribs that wouldn't fit on a plate. Usually you just have to cut these long racks in half to get the perfect serving size (about 4-6 rib bones per rack). You'll have 4 of these smaller racks at about a pound each.

2. Preheat the oven to 300°F.

3. Tear off 4 pieces of aluminum foil that are roughly 6 inches longer than the ribs.

4. Coat the ribs, front and back, with your choice of BBQ sauce. Place a rack of ribs, one at a time, onto a piece of foil lengthwise and wrap up tightly.

5. Place the ribs into the oven with the seam of the foil wrap facing up. Cook for 2-2 1/2 hours, or until you see the meat of the ribs shrinking back from the cut ends of the bones by about 1/2 inch. This long cooking time will ensure that the meat will be very tender and fall of the bone.

6. Toward the end of the cooking time, prepare the barbeque.

7. Remove the ribs from the foil and smother them with additional barbeque sauce. Be sure to save some for later.

8. Grill the ribs on the hot barbeque for 2-4 minutes per side, or just until you see several spots of charred blackened sauce. Watch for flames and do not burn!

9. When the ribs are done, use a sharp knife to slice the meat between each bone about halfway down. This will make it easier to tear the ribs apart when they are served. Serve the ribs piping hot with additional sauce on the side, if desired.

Tidbits

If you've got time to marinate these ribs in advance, do it. I've found these ribs are extraordinary when they've been soaking in barbeque sauce for 24 hours before cooking. Just prepare the ribs in the foil as described in the recipe and keep them in your fridge. Toss them, foil and all, into the oven the next day, 2-2 1/2 hours before you plan to scarf out.

I bake ribs at 350 or 375 in a covered roasting pan for about 1 1/2 - 2 hours. Some people boil ribs in water instead, but I find that the ribs become a lot more tender this way. After this initial baking, place ribs in a foil-lined baking dish and baste with bbq sauce (or whatever sauce you use) and bake uncovered at about 400 for about 15 - 20 minutes. Turn ribs over and baste again and return to the oven for another 15 - 20 minutes or until they are "done" to your liking (some folks like the sauce really cooked on!) Good luck!

Easiest way I've ever found to make them and my husband swears they are better than Applebees.

Bake at 300 in shallow baking dish covered with aluminum foil for 2 hours. I usually cut them into serving size pieces before doing this. Remove from oven and place on hot grill for 12 minutes, brush on your favorite barbecue sauce and turn on occasion (at least once to get both sides with the barbecue sauce).

My father-in-law boils them before grilling, but I've found baking makes for tastier ribs and slightly less mess.

super duper easy....and it never fails me!
*rub ribs with salt, pepper, garlic powder, chili powder, whatever you like...
*cut into 3-4 bone sizes and plave in large pot
*cover ribs with mixture of H20 & Coke
*bring to boil, then turn heat to low and cover
*simmer 2 hours or so
*remove from pot, baste with BBQ sauce, and bake at 400 for 10-15 minutes, till glaze carmelizes.

Mix your favorite BBQ sauce and Italian dressing and marinate them over night or at least 2 hr. BBQ them using the marinate for basting
