without quick cooking oats!

This is the greatest recipe - chewey and crispy all at once.

5 cups oats
4 cups flour
1 tsp salt
2 tsp baking powder
2 tsp baking soda

2 cups butter or hard marg
2 cups brown sugar
2 cups white sugar (I like to use less)
4 eggs
2 tsp vanilla

1 - 2 cups stuff (chocolate chips, raisins, etc.)

Combine dry ingredients. Cream wet ingredients. Add dry to wet a little at a time. Add stuff. Roll into balls (or use a cookie scoop to portion out) and bake at 350 for 10 minutes. It makes a large batch so I like to freeze half for later and make half. Enjoy!!

For muffins, I just substitute some flour for oatmeal in a recipe I like. When using 2 cups of flour, I would reduce it to 1 1/2 cups and add 1/2 cup oatmeal. Easy as pie!!
