Gyro meat consists of a blend of beef and lamb with Mediterranean spices. There is also chicken processed as is the beef/lamb.
beef is cheaper than lamb. but the taste? not the same.

I guess that depends on you taste. Personally I wouldn't mind being buried with a rack of lamb or a pound of slab bacon, but I'm weird like that. When pressed though I would go with pork, It has much more to offer, and has a much more useful fat, culinary speaking.

Beef will be better on account of most people will prefer it's taste.
It's also (most of the time) a less expensive cut of meat.
Lamb, also, isnt always available unless you shop at a larger supermarket or have a local butcher.
