I am making this dish Friday for my father's birthday and I am stuck on what sides to make along with it. What are your suggestions?

2 tablespoons unsalted butter
3 Granny Smith apples, peeled, cored, and sliced in 1/2-inch-thick wedges
Leaves from 2 fresh thyme sprigs
1/4 cup raisins
3/4 cup frozen apple juice concentrate, thawed
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch dry mustard
Sea salt and freshly ground black pepper
1/2 lemon

Maple glazed pork chops...mmmmm! I think maybe something apple-y like baked apples with cinnamon and raisins. Or if you want use the glaze on some boiled baby carrots (buy them in the bag and boil until tender, drain and toss in glaze. Throw in some slivered almonds!)

You could try making jasmine rice or something to that nature that is kind of sweet but still considered savory like cornbread stuffing.

We just made a pork rib roast yesterday. For sides we had corn pudding, and winter squash. You could cut a butternut squash into one inch cubes and apples into cubes a little larger, steam and then mix with some of the glaze from your pork chops.

how about baked winter squash? It would be a nice compliment to the pork. Cut an acorn or butternut squash in half, remove the seeds, bake it until tender, then put some butter, cinnamon & brown sugar in it and put in back in teh oven for a few minutes.

You gotten some great suggestions! Mine would be:
1.broccoli with some sprinkled cheese over top, along with baked yams, a good green salad, rolls and baked apples with whipped cream for dessert.
2. Peas and carrots, and potatoes au gratin, waldorff salad and birthday cake w ice cream....or what is his favorite dessert? It doesn't always have to be birthday cake--does it? Cream puffs, homemade sugar cookies in heart cut-outs that say "I love you".

a nice wild rice pilaf or wild and long grain rice pilaf sounds good-although candied yams would be yummy, too for a starch.For a veggie fresh steamed asparagus with butter or hollandaise sauce or fresh green beans with almonds or green bean casserole. It would make the meal a bit heavy but it would be hearty!For the candied yams I just buy canned yams already in a seasoned syrup,drain and mash then top with marshmallows and bake until slighly browned.

If he likes brussel sprouts, I might do sauteed baby brussel sprouts. Some simple fried potatoes might be tasty too with the sweetness of the maple glaze.

Just my two cents, but doing something with apples might be overly sweet with a maple glaze.

Any type of sweet potato or apple dish would be good.

Mashed Sweet Potatoes
INGREDIENTS:
1/4 c. butter
1/2 c. milk
1 tsp. cinnamon
1/2 tsp. salt
6 med. size sweet potatoes, cooked and mashed (or 1 can sweet potatoes 1 lb. 13 oz.)
2 c. miniature marshmallows

PREPARATION:
Add butter, milk, cinnamon and salt to mashed sweet potatoes. Beat until smooth, light and fluffy. Spoon into greased 1 1/2 quart casserole. Cover with marshmallows. Bake at 350 degrees for 20 to 30 minutes.


Sweet Potato and Apple Bake
INGREDIENTS:
4 medium size sweet potatoes
2 apples, peeled, cored and thinly sliced
1 small onion, chopped
1/4 cup light brown sugar, packed
1/2 teaspoon dried marjoram
2 tablespoons butter
1/3 cup water
3 tablespoons lemon juice
1 cup shredded cheddar cheese

PREPARATION:
Boil sweet potatoes in salted water for 30 to 40 minutes, until tender. Drain, cool, peel, and cut into 1/4-inch slices. Arrange have of the sliced sweet potatoes and half of the sliced apples in a 1 1/2-quart shallow baking dish.

Sprinkle with onion, brown sugar, and marjoram; dot with butter.

Arrange remaining sweet potato and apple slices in the baking dish. Combine water with lemon juice; pour over layer of sweet potatoes and apples. Sprinkle cheese over top. Bake at 350° for 30 minutes.
Serves 4.


Butternut Squash and Apple Casserole
INGREDIENTS:
1 small butternut squash (about 2 lbs)
2 apples, cored, peeled, sliced
1/2 cup brown sugar, firmly packed
4 tablespoons butter, cold
1 tablespoon flour
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

PREPARATION:
Peel, seed, and cut squash into small slices. Place squash and apple slices in a baking dish, about 11- x 7-inches Combine brown sugar, flour, salt, cinnamon, and nutmeg; cut in butter with fork or pastry cutter until crumbly. Sprinkle crumbs evenly over sliced squash and apples.

Cover and bake at 350° for 45 to 55 minutes.
