Could a modern interpretation of Shariah remove the death penalty prescribed for apostasy?

NO MATTER WHAT RELIGION ,WHAT CULTURE. NO ONE SHOULD BE ABLE TO JUDGE WHO SHOULD DIE IN THE NAME OF IGNORANCE. IT IS TOTALLY UP TO GOD AND NO ONE ELSE.

Look Shariah leave the death penalty to the victim family and Islam encourages forgiveness. Can any of victims families do that in the west too.

Shariah comes from the Qur'an and Hadith.

There is a verse of the Qur'an "There is no compulsion in religion"

There is a hadith which claims the Prophet(pbuh) told people to kill apostates. We don't know what circumstances they were in.

But the basic rule of the Science of Hadith is that a Hadith cannot be in contradiction with any verse of the Qur'an. So that Hadith can and should be rejected.

there are two types of punishment.
There are punishments against exceeding God's limits, such as murder, illegal sex , stealing and such. Those are all mentioned in the Quran and Sunna the texts are clear and in those you cannot compromise or change at all.
The other type is those that were not mentioned, and some of them are new, such as drug dealing and other stuff. Those depend on the scholar's studying those cases and what suits best with the usage of the Sunna on thing similar to the new things.
Therefore we can't change the basic things in the Sharia

Yes. I personally believe that apostasy should not be condemned to death because it does not allow say that in Quran. And even the Hadiths that talk about it i feel apply to only those people who try to play games such as converting to Islam with false intention and then leaving Islam with the only intention to tarnish Islams image.

it could. some shariah laws are not exactly based on the Quran. i'm not sure about the law for apostasy.

Just because some people thing the death sentence is bad, doesn't mean you change religious believes or impose your beliefs on people's religion.

The death sentence is neccessary in certain cases.

I don't know what apostasy is though

no sharia is Allah creation we can't change it is the rules of the world . for example could we say what about leaving the murders it is the same thing if u did that . but any way no Islamic country does that expect Saudi Arabia i wish that i am living there
