A little bit of applesauce added to the mix will add moisture and make the cake come out very moist. Applesauce is often suggested as a substitute for oil when making cake from a mix and trying to cut calories, but you can make the cake like regular and just add a little for the moisture content. Start with 1/4 cup, and experiment from there, as each recipe is different.
I like moist cakes, too, and what I do is slighly underbake mine. If the recommended cooking time is 30 mins, I start checking it at 25. They are still very light and fluffy, but that tiny extra bit of moisture hasn't had a chance to bake out yet, so they are very moist. I pull them out of the oven the minute the toothpick comes out clean. I have found that if I leave them in for the length of time recommended on the box or recipe, they are "well-baked", so I just try to take them out the minute they are done, rather than three minutes later.

Add sugar.
Add oil (which limits the production of gluten in the flour).
Cut out an egg white or two. They are drying agents.
The protein (flour and eggs) makes the batter set up. The sugar and fats make it tender and moist. It is important to keep the elements in balance. The standard ratio is one cup sugar to 1-1/2 cup flour. For a sweeter, moister product, use 1-1/3 cups sugar to 1-1/2 cups flour.

I've got 20 years cake baking and decorating experience, and this is what I learned; most people tend to overbake their cakes. Your oven should be 325-350, and the cake should be baked until it begins to pull away from the side of the pan and it springs back when touched in the center. You can also insert a toothpick or cake tester to make sure there is no wet batter in the center. To level your cake and make it bake more evenly, tear strips of and old towel, wet them with cold water, and wrap and pin them around the outside of your cake pans. It prevents those dry edges and the big bump of cake in the center. Chocolate tends to dry out more than other batters. If your cake still is not moist enough, add another tablespoon or two of oil. Cream cheese always makes my pound cakes moist...and of course the other liquid ingredients like milk, 3 eggs and 1/4 c. of oil...

My aunt told me this secret and don't freak out, (I did) it actually works!
Substitute one of the eggs and some of the oil with mayonnaise.
Uck! I know it sounds gross but it works. It makes the cake really moist. It is also a good way to make cake if you don't have eggs or oil.

Add a box of instant pudding to the batter!! It really works. You will be amazed how moist it comes out. If you are making a chocolate cake add chocolate pudding, if its a vanilla cake add vanilla pudding. The cake will come out really moist and with more flavor too. Enjoy!

Take your favorite cake recipe and omit the oil and milk. Then substitue the same amount of pie filling for the liquid. Cherry works well with chocolate, apple goes well with white, pumpkin goes good with a spice cake and so on. Reduce your sugar by about 1/4 cup (unless you're a sugar fiend). I guarantee you will love it! Enjoy!!

If your recipe has any oil in it try substituting half of the oil for applesauce. It makes the cakes so moist and it doesn't make them taste like apples!!! GL

I add 1 tbsp. cornstarch and 2 tbsp. water (1 egg sub.), plus I add a little soymilk.
That makes my cake moist. Hope it works for you!
