Cinnamon Toast
Mix cinnamon and sugar together and sprinkle over buttered toast.
A great treat when you are sick , need a treat and don't feel like cooking.


Caramelized Apple Cheesecake with Spiced Creme Anglaise and Butterscotch Sauce

4 tablespoons plus 1 teaspoon unsalted butter
1 cup shortbread crumbs (about 5 1/2 ounces of cookies)
1/2 cup plus 2 tablespoons granulated sugar
2 tablespoons melted unsalted butter
2 tablespoons water
1 cup peeled, cored, and thinly sliced Granny Smith apples (about 2 apples)
1 1/2 pounds cream cheese
3/4 cup packed light brown sugar
3 large eggs
1 teaspoon fresh lemon juice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Spiced Creme Anglaise, recipe follows

Grease a 10-inch springform pan with 1 teaspoon of the butter.

Combine the crumbs, 2 tablespoons of the sugar, and the melted butter in the bowl of a food processor and mix on low speed until well blended. Transfer to a greased 10-inch springform pan and press evenly around the bottom. Chill in the refrigerator for 1 hour.

Preheat the oven to 325 degrees F.

Combine the remaining 1/2 cup sugar and the water in a heavy, medium saucepan, and bring to a boil. Reduce the heat to medium and cook, stirring occasionally, until the sugar is dissolved. Continue cooking, swirling the pan occasionally, until the caramel is amber in color, 5 to 7 minutes. Add the remaining 4 tablespoons butter, stir, and cook over low heat until the butter is melted and evenly blended. Add the apples and stir to coat with the caramel. Cook, stirring, over medium heat until the apples are tender, about 5 minutes. Remove from the heat and let cool.

Combine the cream cheese and brown sugar in a large bowl and beat with an electric mixer until smooth. Add the eggs 1 at a time, beating well after each addition and scraping the sides of the bowl as necessary. Add the lemon juice, cinnamon, and nutmeg and mix well. Fold the apple-caramel mixture into the batter, and pour into the chilled pan. Bake, rotating the pan a quarter turn every 30 minutes, until golden brown and firm around the edges, but still slightly loose in the center, 1 hour and 20 minutes to 1 hour and 30 minutes.

Remove from the oven and cool for 2 hours. Cover the cheesecake and refrigerate for at least 4 hours, or overnight.

To serve, spoon a portion of the Spiced Creme Anglaise onto each serving plate, top with a slice of the cheesecake, and drizzle with the Butterscotch Sauce.

Spiced Creme Anglaise:
2 cups heavy cream
1/2 teaspoon orange zest
1/4 teaspoon ground cinnamon
1/8 teaspoon grated nutmeg
3 large egg yolks
1/4 cup sugar

Prepare an ice bath by filling a large metal bowl with ice and water.

Combine cream, zest, cinnamon, and nutmeg in a medium saucepan and bring to a simmer over medium heat. Remove from the heat.

In a medium bowl, beat the egg yolks and sugar until pale and thick, about 2 minutes. Slowly drizzle in the hot cream, whisking constantly. Return the mixture to the pan and stirring constantly, cook over medium heat until the sauce thickens and coats the back of a spoon.
Place in an ice bath and stir until cool.

Cover with plastic wrap, pressing down against the surface to prevent a skin from forming. Refrigerate until well chilled, about 2 hours. Serve cold.

Yield: 2 cups

Easy Apple Cinnamon Rolls
INGREDIENTS:
1 teaspoon ground cinnamon
1/2 cup granulated sugar
1 tube (8 ounces) crescent rolls
2 large apples, peeled, cored and cut into 8 wedges each
2 tablespoons melted butter
1/4 cup water
PREPARATION:
Preheat oven to 400°. Combine cinnamon and sugar; set aside. Unroll crescent roll dough; separate into 8 triangles. Cut each triangle in half lengthwise to make 16 triangular strips. Place an apple wedge on the wide end of each strip; roll up. Arrange the rolls in a 9x13-inch baking pan.
Drizzle with the melted butter then sprinkle with cinnamon-sugar mixture. Pour water into pan, but not over the rolls. Bake for 30 to 35 minutes, or until golden brown and apple wedges are tender.

20 unbaked frozen dinner rolls (Bridgeport is a brand I have used)
1 cup brown sugar
1/4 cup instant vanilla pudding mix
2 teaspoons ground cinnamon
1/3 cup butter, melted
Lightly grease a 10-inch bundt cake pan. Place frozen rolls into the pan and sprinkle with brown sugar, the pudding mix and cinnamon. Pour melted butter over the top.Cover with a clean, damp cloth and leave overnight at room temperature to rise.
In the morning, preheat the oven to 350 degrees. Bake rolls for 25 minutes, until golden brown. FLip on to serving plate and serve!!

I looked this one up for you! My fave!! Snickerdoodles!

1 tablespoon ground cinnamon
1 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cream of tartar

PREPARATION:
In a shallow bowl, combine 1 tablespoon sugar and cinnamon; set aside. Cream shortening; gradually add 1 1/2 cups sugar, beating well. Add eggs; beat well. Stir in vanilla.
In a separate bowl, sift together flour, soda, salt and cream of tartar. Add sifted ingredients to creamed mixture; stir until well blended
Shape dough into 1-inch balls and roll in cinnamon-sugar mixture. Place snickerdoodles 2 inches apart on lightly greased baking sheets.
Bake snickerdoodles at 400° for 6 minutes or until lightly browned. Remove to wire racks to cool. Makes about 4 dozen snickerdoodles

French Toast...take several pieces of sliced bread, dip in a mix of egg/milk, cinnamon, sugar, pinch of salt, and splash of vanilla. Heat a skillet with a healthy type of margarine or butter. Fry until at least crispy along the crust. Place on a platter with a pat of extra margarine or butter (to taste)...sprinkle with powdered sugar..then use either syrup or jam. Excellent in restaurants down here. You can also top with fresh fruit.

One of my all time favorites! Now if you're just craving it and have to have something ASAP....try some CINNAMON TOAST. With that....all you have to do is spread a little butter on some bread, sprinkle with sugar & cinnamon and then toast it. Yum.....

Cinnamon toast . or you can mix Cinnamon and sugar mixed up with cream cheese and spread on a bagel .
