"Corned Beef Hash" - 4 servings

2 cups finely chopped cooked corned beef
2 cups finely chopped cooked potatoes
1 small onion; chopped
1/4 tsp. pepper
1/4 cup butter or margarine
1/4 cup milk

1) In large bowl, combine corned beef, potatoes, onion and pepper; toss to mix well.
2) In heavy, 10" skillet over medium-high heat, heat butter. Add corned beef mixture to skillet; press down with spatula to form even layer. Pour milk evenly over top. Cook 10 minutes or until lightly browned on bottom. Reduce heat to medium; cook 5 minutes more or until well browned.
3) With spatula, turn mixture over in large pieces; press down with spatula. Cook 5-10 minutes more until browned.


"New England Boiled Dinner" - 8 servings

1 (3-lb.) corned beef brisket
16 small white onions; peeled
8 small potatoes; peeled
8 medium carrots; halved crosswise
1 rutabaga or 2 turnips; peeled and cut into wedges
1 medium head cabbage; cut into wedges
Prepared mustard
Horseradish Sauce (recipe follows)

1) In 6-quart Dutch oven or large pot, place corned beef and enough water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 1 1/2 hours or until meat is nearly tender.
2) Add onions and potatoes; cover and simmer 20 minutes. Add carrots and rutabaga; cover and simmer 15 minutes. Arrange cabbage over all; cover and simmer 15 minutes more.
3) To serve: Place meat on platter; arrange vegetables around meat. Spoon a little cooking liquid over vegetables. Serve with mustard and Horseradish Sauce.

"Horseradish Sauce" - 1 1/2 cups
1 cup sour cream
1/4 cup mayonnaise
1/4 cup prepared horseradish
1/2 tsp. salt
1/2 tsp. prepared mustard
Dash white pepper
In medium bowl, stir together all ingredients.

Try a delicious Corned Beef and Cream Cheese Ball appetizer. It sounds gross to some people but it is unbelieveable and a great appetizer when it is spread on crackers.

Of course u can make some green bananas and slice them up and make plantains and then with some white rice cook it mix all the ingredients together and u and some plantains with white rice and corned beef. Its REALLLLY Good.

I prefer for corned beef meals

cabbage, and whole baby carrot
parsnip and potato mix with applesauce
parsnip and peas served with cheese and cracker ordirve
radiccio shred and cauliflower puree soup
with vegetable or pasta
