This is my favorite recipe, and it makes the tastiest meatloaf!

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

I tried a recipe for Bacon Cheeseburger Meatloaf that I watched Paula Deen prepare on the Food Network the other day. It was delicious! My family ate every crumb and licked their plates clean. It was so yummy. One thing Paula did (and the recipe does not mention this) was she placed slices of bread in the baking pan, then put the meatloaf on top. The bread soaks up all the fat, so you don't have the meat baking and soaking up all that grease. I tried this when I cooked mine and it worked great! I also baked mine in a small cake pan (about 7 x 11) rather than a loaf pan. I hope you like the recipe as much as my family and I did. Good luck!

Here is the recipe:

1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions

Preheat oven to 350 degrees F.
In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

Try this recipe. Its a bit unusual but really really good!

INGREDIENTS
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

1 onion (cut in chunks)
1 green pepper (cut in chunks)
2 handfuls of baby carrots
(Put the vegetables in the food processor and chop. Should be diced, not blended)

1 lb Hamburger
1 lb Buffalo, turkey (if unavailable just use more beef)
1 lb lamb, veal, pork, mild pork sausage (looking for something fatty to balance the dry buffalo)
1 egg
1 cup ketchup (or chili sauce)
1/2 pkg of crushed oyster crackers
1/4 cup honey (darker is better)
1 tsp cumin
1 tsp chili powder
1 tbsp worchester sauce
1 tsp kosher salt
ground pepper

fold the ingredients together with your hands (don't squeeze!). If it doesn't seem to be holding together well, add another egg. When blended, put a piece of parchment paper on a cookie sheet. Shape the meatloaf into a rectangle roughly the size of a loaf of bread (may be longer than an actual loaf but keep the height and width the same as bread for easy leftover sandwiches). Pat a little trench into the top.

Heat oven to 350. Meat loaf will cook for about an hour (internal temp of 160F)

Mix 2 cups ketchup with 1/2 cup of honey and 2 tbsp of worchester sauce. Add salt, cumin, chili powder, and pepper to taste (adjust entire mixture to taste). When meatloaf is at 140-150 degrees, glaze the meatloaf with the sauce (that's why we put the trench in the top). Reserve enough sauce to serve with meatloaf.

Let the meatloaf sit about 10 minutes after you take it out, otherwise it will fall apart.


Every time I make this my otherwise vegetarian sister eats enough to make herself sick.

I don't like ketchup in meatloaf, so here is my recipe:

Classic Meatloaf
1 1/2 lbs ground beef
1 cup soft breadcrumbs
1/2 cup milk
1 egg
1 small onion, finely chopped
Salt and Pepper to taste

Mix ingredients well. Put mixture in loaf pan, bake @ 350° for 1 - 1 1/2 hours until done.

This is one my kids love & its stuffed with Spinach...

1 cup Mushrooms ~ cooked, coarsely chopped
1/4 cup onion ~ cooked, chopped
10 oz. frz choped spinach, thawed, drained (sqeeze out)
1/2 cup shredded Mozzarella Cheese
1/4 cup Grated Parmesan Cheese
1 lb. Gr. Turkey Breast
1/2 cup. skim milk ~ (I don't use - will sub. 8 oz. Tomato Sauce)
1 egg ~ lightly beaten
1 tsp. Italian herb seasoning

Pre-heat oven 375

Saute mushrooms & onions untill tender, remove from heat add spinach, Parmesan Cheese & 1/2 of Mozzarella ~ put aside

In a bowl combine remaining Ingrediants.
Put 2/3 meat mixture down 11 x 7 baking dish (line w/foil for easy clean-up) Make a deep indentations down center of meat and fill with Spinach Mixture. Top with remaining meat, sealing edges to completely cover Spinach Filling.

Bake 30-35 min. or untill cooked thru.

Sprinkle with remaining Mozzarella Cheese & Serve

Classic Meatloaf

Ingredients:

1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
Topping
1 tablespoon packed brown sugar
1 teaspoon dry mustard

Procedure:
Heat oven to 350°F. Measure 1/4 cup tomato sauce, combine with topping ingredients in small bowl.

Set aside.

Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.

Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf.

Bake in 350°F oven 1 hour to medium (160°F) doneness, until not pink in center and juices show no pink color.
Let stand 10 minutes before cutting. Cut into slices.

Cook's Tip: To make soft bread crumbs, place torn bread in food processor or blender container. Cover, process, pulsing on and off, to form fine crumbs. One and one-half slices make about 1 cup crumbs. To save time, and for a different presentation, beef mixture may be divided evenly and shaped into three 1-1/2-inch thick loaves. Place on rack in broiler pan, spread topping evenly over loaves. Bake in 350°F oven 40 to 45 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color.

My absolute favorite is a meatloaf stuffed with spinach and ricotta cheese and you roll it up like a jelly roll to bake. It is absolutely awesome. It is a little extra work to make, but well worth it.

Here is my version of it. All measurements are approximate:

Spinach Stuffed Meatloaf

Meat mixture:
1 ½ pounds ground beef, pork or turkey or some combination
1 or two cloves garlic
¾ cup bread crumbs or oats
1 egg
¼ cup Parmesan cheese
1 tsp. salt
1/8 tsp. pepper
½ cup milk

Filling mixture:
1 pkg. frozen spinach (10 oz.), chopped and drained
½ - 1 cup shredded mozzarella or cheddar or Monterey jack or provolone
½ cup ricotta cheese
3 Tbs. Parmesan cheese
¼ cup shredded Romano cheese
1 tsp. Italian seasoning or 1 tsp. thyme or basil and oregano
salt, pepper and garlic powder to taste
¼ cup chopped onion
1 cup coarsely chopped mushrooms
1 egg
¼ cup bread crumbs
½ cup shredded zucchini

Topping
3 Tbs. ketchup
¼ cup shredded mozzarella
Italian seasoning or thyme

Cook onion, zucchini and mushrooms over medium heat until onions are tender. Mix thoroughly into the cheese filling mixture.

Pat meat mixture into 14 x 10 in. rectangle. (I use a large sheet of waxed paper and spread the meat on that. Makes the rolling up easier.) Spread filling over meat, leaving a ¾ in. border. Roll up from short end, spreading meat mixture over filling at both ends to seal.

OR spoon 2/3 of the meat mixture down the centre of an 11 x 7 in. baking dish. Form a deep indentation down the middle of meat mixture. Spoon the filling into the indentation and top with remaining meat mixture. (This is not nearly as impressive as the jelly roll, of course! :)

Place seam side down on rack in roasting pan and bake 45 minutes to 1 hour at 350 degrees. Top with ketchup and/or mozzarella or with cheesy mashed potatoes. Continue baking a few minutes longer if topped with ketchup and cheese, or 30 minutes if topped with potatoes. Let stand 5 minutes before slicing. Serve in 1 inch thick slices.

Potatoes to serve with the meatloaf:
Mash 5 cooked potatoes with ½ to ¾ cup milk or chicken broth. Gently stir in 1 cup shredded cheddar cheese, cover, and let sit for 5 minutes to let cheese melt.

I like to "experiment" when making mine. Like, for instance, I will put onions, green pepper and some corn meal (batter) and picante or salsa in mine.........tastes really good!

Btw, you can substitute "tapioca" for the bread/cracker crumbs. Doesn't taste like pudding (hee,hee) but holds it together and tastes really nice and moist!!
