If you have been a vegetarian for so long, why in God's name do you want to cook meat? You're not going to eat it, are you? :0P

To make sure you have cooked the chicken enough, use a meat thermometer, chicken should be 180 degrees in the center when it is fully cooked. Eventually you will be able to tell when it is done just by looking at it. The inside looses it's "slimy" look and becomes more dry and white instead of pink.

The simplest way I cook chicken is in a baking dish, in the oven for about 45 minutes with the oven at 450 degrees. I would start checking the chicken at about 35 minutes with the thermometer, many ovens cook at different times, and you don't want to overcook your chicken.

Before putting the chicken in the oven, sprinkle it with some garlic powder and lemon pepper seasoning (if you like that flavoring). Poke a bunch of holes in it with a fork or knife or something similar to let the juices get out and cook the chicken more evenly. Don't cover the dish either.

I don't cook fish so I can't help you there.

Good luck!!!!

Chicken and fish both should be cooked completely through. Fish cooks very fast. One way I cook fish is to dredge it in a seasoned mix of flour and cornmeal then dry fry it in a heavy cast iron pan, it only takes a few minutes per side. You can tell the fish is done when you seperate it with a fork in the middle and it comes apart in flakes.

You can cook chicken the same way. It takes a lot longer. You can tell it is done by cutting into it. The meat will be a uniform white with no pink in it.

There are a lot o other healthy ways to cook meat, you should get a cookbook.

Why are you becoming an omnivore?

The healthiest way to make chicken is to boil it. Maybe add it to some noodles, on top of pizza...your choice.

As for fish, marinate it in a desired sauce, and bake it.

Here are a bunch of great recipes. The best way to make sure chicken is done is to use a meat thermometer. It should read 180 F.
