Queso Blanco

1 cup monterey jack cheese or asadero cheese or chihuahua cheese, shredded fine
4 ounces green chilies
1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)
1. Put all ingredients in a double boiler and heat on medium.
2. Cook until melted and well blended, stirring occasionally.
3. Serve with fresh tostadas or hot flour tortillas.

To make the Queso (cheese) like they serve in restaurants is just like the cheese we buy at the store, there's no secret to that? Now if asked for a recipe that restaurant's have for using Queso would be a different question

I LOVE queso! Here's a recipe! Does it match up?

Queso Dip

INGREDIENTS
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
2 cups shredded Pepper Jack cheese
1 cup salsa
1 teaspoon dried, crushed Mexican oregano
salt and pepper to taste

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, blend sour cream and cream cheese until smooth. Mix in taco seasoning mix. Stir in salsa, Mexican oregano, salt and pepper.
Transfer to a 9x13 inch baking dish. Top with Pepper Jack cheese. Bake in the preheated oven 10 minutes, or until cheese is melted.
