Salsa Borracha (Drunk Salsa)

INGREDIENTS
4 fresh tomatoes
10 fresh jalapeno peppers, halved lengthwise and seeded
1 (12 fluid ounce) bottle Mexican beer
1/2 cup water, or as needed
1 clove garlic
1 slice onion
salt to taste

DIRECTIONS
Place the tomatoes and jalapenos into a saucepan, and pour the beer over them. Add enough water so that the tomatoes and jalapenos are covered. Simmer over medium heat until soft. Remove from heat, and let cool slightly.
Transfer the tomatoes and jalapenos to a blender, and add the garlic and onion. Pulse until well blended. Add some of the cooking liquid to help with blending if necessary. Taste, and season with salt.

I like all types of salsa but my all time favorite is fresh salsa it is easy and keeps well in the refrigerator. You will need tomatoes, jalepeno peppers, onion, celantro (if you like it) and lemon or lime juice. I like to dice everything medium fine and the peppers finely minced. I use 2 tomatoes to every jalepeno, put all cut ingredients into a bowl and stir add juice, salt, pepper, garlic (either fresh smashed or powder) to taste. If you like your salsa mild add more tomatoes. She would also add avocados to half of the mixture and have guacamole. I hope that I have been some help to you.

4 medium plum tomatoes, seeded and quartered
1/4 cup coarsely chopped Spanish onion
1/2 medium jalapeño pepper, seeded, diced
1/4 cup chopped fresh cilantro
1/4 cup lime juice, plus more to taste
1/3 cup olive oil

In food processor fitted with metal blade, pulse all ingredients until puréed. Transfer to bowl, season with salt and freshly ground black pepper, and add more lime juice if desired.

Dip can be made in advance and refrigerated, covered, up to 2 days. Makes about 1 cup.

I have also not blended it and left it chunky, but you have to dice everything pretty small.

get tomatoes, jalapeno peppers, onion, cilantro, garlic, salt, and squeeze of lime juice and it will be wonderful, add small amounts at first until you get the taste or spiciness that you want. mix in a blender until you get the consistency you like
