I think you mean pickled ginger like you get with sushi. If this is correct here is a recipe:
1/2 lb ginger, peeled and cut paper thin
1 cup rice vinegar, unseasoned
1/2 cup apple cider vinegar
1/2 cup sugar
2 tablespoons sea salt
Place ginger in a bowl and cover with boiling water. Let sit for 5 minutes to soften.
Meanwhile, add remaining ingredients in a small saucepan and heat to a simmer. Pour over drained ginger and transfer to a jar. Will keep for about a month.

Use Cider Vinegar or Brown Rice Vinegar
1) Scrub the pieces of gingerroot meticulously until very clean and cut off any small knobs, bits, and ends. Cut the pieces of ginger in half lengthwise, and then cut these pieces into paperthin slices.
2) Place the ginger slices on the bottom of the container and add sufficient vinegar to cover all the pieces completely.
3) Leave to marinate in the refrigerator for at least 72 hours before using.

peanut ginger marinade
INGREDIENTS
1/2 cup hot water
1/2 cup creamy peanut butter
1/4 cup chile paste
1/4 cup soy sauce
2 tablespoons vegetable oil
2 tablespoons white vinegar
4 cloves garlic, minced
2 teaspoons grated fresh ginger root
1/4 teaspoon ground red pepper
3 pounds skinless, boneless chicken breast halves - cut into bite-size pieces
DIRECTIONS
In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.
Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken pieces onto skewers. Discard marinade.
Grill chicken 8 to 10 minutes per side, or until no longer pink, and juices run clear
teriyaki marinade with ginger and garlic
INGREDIENTS
1/2 cup soy sauce
1/4 cup red wine vinegar
1/4 cup white wine
2 tablespoons honey
1 tablespoon fresh ginger root, finely chopped
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
DIRECTIONS
In a medium bowl, mix soy sauce, red wine vinegar, white wine, honey, fresh ginger root, garlic and crushed red pepper flakes. Place in an appropriately sized sealed container with desired type of meat. Shake well to coat. Allow meat to marinate in the mixture at least two hours before cooking
