I first cut out the middle stalk of the cabbage and then I cut the cabbage down the middle into two pieces, then across each piece and then down the middle of each piece again. I place the cabbage into a large stock pot, add about 2 cups of water, salt, pepper and a little bit of cooked bacon or sometimes I add a little Texas Pete hot sauce. Place a lid and cook on medium until the cabbage is of your desired consistency. I don't like mine soggy, so I cook it about 15 minutes.

Cut it across the grain so you get shreds (don't use the thick "core"). You can boil it, but the water will take out a lot of the goodness. You can also steam it, or use in stir fry.
White cabbage can be eaten raw in coleslaw. Red cabbage, slowly cooked with vinegar, sugar and other seasonings (very little liquid for the reason given above) makes a fab side dish for richer meats such as pork and duck.

Cabbage Cooking Tips
Complimentary herbs and spices for cabbage include celery seed, mustard seed, nutmeg, savory, tarragon, garlic, caraway seed, dill weed, black pepper, and thyme. Good companion vegetables include potatoes, leeks, onions, and carrots. It pairs beautifully with corned beef, bacon, and sausage.
Use red or purple cabbage leaves to hold side dishes or salads on the plate for an attractive and colorful accent. Cabbage heads can be hollowed out and used as unique serving containers for cold dips and spreads. Red and purple ones make excellent centerpieces used as a container.
Many cooks prefer to trim away the bitter white core of the cabbage before shredding or cooking. If you need the leaves whole to stuff, you'll find it easier to separate them if you core the cabbage and plunge into boiling water for one minute.

Core and slice cabbage in 1/4 slices. Chop one medium white onion in to small bits. Combine Cabbage and onion season with seasoning salt that includes celery seed / garlic, onion, and salt and small bit of black pepper (I can't recall the name of the stuff but can't find it all the time and it is made by Shilling) then cover with water and bring to boil. Cook cabbage until tender.
While cabbage is cooking you make a simple white sauce using regular or Wondra Flour and milk. Then add 3-4 slices of kraft american cheese slices.
Drain Cooked Cabbage and return to pot and then stir in white sauce. Adjust seasoning to taste and serve. This is really tasty in the winter. Goes well with Roast.

You can saute it with onion and bacon, make cabbage rolls with hamburger, rice etc., (write me for the recipe if interested), you can add it in your stews or soups and or use it in stir fry. There are a ton of ways to cook it. almost forgot...cook up your corned beef and put in your cut up cabbage and potatoes and carrots all around it, bake, and you've got an instant hearty meal.

I saute with butter or bacon (chopped fine) and a little onion, salt and pepper. I sometimes add tomato (or tomato juice) and other veggies like celery and carrots.
