You have two options from which to choose:
1) God doesn't exist. Things can't be created from something that doesn't exist.
2) God is still resting on the "7th day", and isn't creating anything. And since each one of God's "days" is close to a billion of our years, he'll probably still be resting when our species becomes extinct.

He may not be creating things like in Genesis right now, but He promised that He would make a new Heaven and a new earth in about 1,000 years.

How do you know He has not done so?
Are you and God that tight that He would tell you if He is creating other universes and other beings?
God is still the God of Creation and is creating opprtunities for the saving of souls.
