could i just get my permit and then do the in car stuff to get my licence without going through the whole class?

Yes you have to take the class, including driving time with an instructor and complete a driving log.

Most states now bar you from getting your license until age 17 or 18 without completing a formal driver's ed course. You'll also pay MUCH higher insurance rates without driver's ed.
