add flavorings to oatmeal by using jelly

A soft dish that's very tasty is a Mexican dish with layers of rice, then sour cream, then refried beans, then guacamole. Top it with very finely shredded cheese, if your mum can eat that. If you make the bottom layer cooked rice with Mexican seasoning, then it holds together better when you dish it up. Muy Bueno!
You could also get a very small kind of pasta that you cook until it's softer than al dente but not too mushy and serve it with basil pesto or sun-dried tomato pesto mixed in and topped with Parmesan or Asiago (finely shredded). Viva Italiano!
Another option is a pre-packaged bean soup made by HamBeans. It is a bag of 15 different dried beans with a seasoning pack. Just be cautious with the seasoning so it's not too spicy. You can add dried rice to this soup in the last 30 min. to 1hr. of the cooking time to form a complete protein with the beans. It calls for adding chopped onion which you'd have to chop very fine and a can of tomatoes for which you could substitute finely diced tomatoes or tomato sauce. You could also add 3 cans of Hormel lean ham (5 oz. each in the canned tuna & canned chicken aisle). Chop up the ham really fine and add it in the last 30 min. The longer you cook this dish, the softer it will become. This is a LOT of soup but can be frozen in single servings for later. You'll like it, too!
These are all very tasty dishes and not hard to prepare. They should add a little dash to your mum's diet. Your mum is lucky to have such a caring and concerned daughter to cook for her.

My grandma/mother has a similar situation...Coming from an asian family there are several simple yet tasty food instead of the usually boredom potatoe pudding...One tasty and healthy is rice soup...its rice but its soups...thick similar to that of a pudding but the advantage of rice is that you can add your own flavors to it...like soft boil chicken breast(it was use in earlier days where ppl were not able to chew due to the limited amt of teeth they had) they needed something very soft that it can go easy on them... Another yummy one is wonton soup...Tofu/mushroom style...I will give you the receipe and instruction as soon as I can get my hands on my aunt...But never the less The rice soup is in my number one spot for food...Rice alone is surprisingly very good...But hey don't take my word for it... I love my mom and grandma very much....there are so many type out there...it can't get boring from eating....most of these dishes are prep for dinner in asian families....Check it out....if you get tired of seeing mash potatoe this...blend this....

What about adding minced garlic to the mashed potatoes, that's quite tasty.
Mixed mashed berries, like blueberries or blackberries and custard.
Mashed Avocado is really scummy too.

Keep trying, you will soon find out what your Mom likes - or doesn't.

You could make something like a stew for example and blend it in a food processor. Also there are loads of different soups you can make, try looking on the net for some recipies.

dear ruth,
my mum had trouble swallowing too...so I made her egg custard which is sweet and nutritious..and I got a protein powder at GNC that I mixed and froze, tasted like icecream but was so nutritious. all other food I cooked to the softest stage I could and I prayed a lot, so my heart is with you having to try to feed someone who cannot swallow...OH, I also got babyfood,,,added some salt and butter,,,wasn't bad ,,she said...May I ask, what is MND?...I pray you all good things. My mum is gone now, so try to make every moment good with your mum...please...

Yogurt. There's lots of variety of fruit ones to chose from! Apple sauce.Icecream. Icecream isn't very healthy though.

Even toddler foods for 1 and over can taste ok. Check them out in the grocery store.

you can mash all sorts with potato, carrot and swede, onions, the works. Home made soups, scrambled egg, fruit smoothies, cottage/shephards pie, icecream.

Try to use a slow cooker, that might help to soften the food with great taste. You might try to grind the food also. There are alot of recipes for slow cooker out there....I am sorry I do not have one right on hand at this time.

mashed butternut squash(this has a slightly sweet taste) or roast one with rice, mushrooms and mixed peppers as they are all soft and easy to swallow, and it looks nice as she must be fed up with puree, try such things a quinoa flakes as this gives substance to things but is soft when cooked, try frying gently, onion, mixed pepper, mushroom, quinoa flakes and a couple of eggs. hope this helps.
