Genovese Minestrone with Sweet Sausage and Pesto
Ingredients:
2 ounces small pasta
1/2 pound sweet Italian sausage (with fennel)
1/4 cup water
1 cloves garlic, minced
1/2 cup diced onion
3/4 cup red zinfandel
1/2 teaspoon dried oregano
dash dried thyme or 1/2 teaspoon fresh
1 bay leaf--stick toothpick through leaf
1 medium red potato, diced
1/2 cup sliced celery
1 10 ounce box frozen mixed vegetables
3 cans chicken broth
half of a 10 ounce package frozen chopped spinach, thawed
1 15 to 16 ounce can diced tomatoes, undrained
1 6 ounce zucchini, halved and thickly sliced
1/4 teaspoon dried red pepper flakes
dash freshly ground black pepper
3/4 teaspoon salt (to taste)
2 tablespoons good quality Balsamic vinegar
2 tablespoons minced parsley
1 can cannellini beans, drained and rinsed
3 tablespoons Pesto sauce
Preparation:
Cook pasta in salted water until al dente. Drain, rinse with cold water and then stir 1 teaspoon olive oil through and reserve.
Simmer sausage links in water, covered, for 8 minutes. Cool and slice sausages. Reserve sausage slices. Cook onions and garlic in sausage liquid about 2 minutes. Add to stock pot. Add wine, oregano, thyme and bay leaf. Simmer while preparing potato and celery.
Add potato, celery, frozen vegetables and chicken broth. Cook until vegetables are tender, about 15 minutes. Remove bay leaf.
Add spinach, tomatoes, zucchini and reserved sausage slices. Simmer 5 minutes.
Add red pepper flakes, black pepper, salt and Balsamic vinegar. Bring to very gentle simmer. Stir if needed to keep from sticking.
Just before serving, add parsley, cannellini beans, Pesto and reserved pasta. Simmer long enough to heat beans through and disperse Pesto sauce.
Note: It’s nice to add freshly grated Parmesan cheese on each serving.
Time Management: Soup may be prepared up to where you add the beans and pasta, etc., and kept warm for 1 hour. If wishing to do farther ahead, stop before adding spinach and remaining ingredients and chill. Reheat and complete as directed.

This recipe is with or without the pasta.
Pasta required is one cup of shells (dry)
Potato chunks, parsnips can be used as well, 1 cup.
Start with
2 small carrots very clean dice to 1/2 inch
1 medium onion yellow, or favorite 1/4 inch dice
1 stalk of celery 1/2 inch dice
6 tomatoes diced save juice or medium can
3 slices of cooked bacon diced 1/2 inch
1 cup shred cabbage and dices 1/2 inch
Cook these for 8 minutes in 1/2 quart stock + 2 cups water
1/2 quart stock cook 1 cup corn, beans, celery choice
2 small garlic crushed
2 tablespoons parsley
add pasta here if you want
cook these two pots for 10 minutes more
add beans to original cook to taste reduce if thicker soup
is what style you like

1/2 cup chopped carrots
1 (19 ounce) can cannellini beans
1/2 cup shredded cabbage
1 (14.5 ounce) can stewed tomatoes
1 tablespoon tomato paste
1 1/2 cups cubed potatoes
1 quart chicken broth
2 cloves garlic, minced
2 tablespoons dried parsley
1 teaspoon salt
1/2 cup elbow macaroni
1/2 cup grated Parmesan cheese
DIRECTIONS
Melt butter or margarine in a heavy pot over medium heat. Add onion, celery, and carrots; saute for a few minutes.
Add beans, cabbage, tomatoes, tomato paste, potato, stock, garlic, parsley, and salt to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.
Add pasta, and simmer for 30 minutes more. Correct seasoning, and serve hot with grated cheese.

MINESTRONE SOUP
3 quarts beef stock
2 c. soaked Great Northern white beans
1/4 c. chopped fresh basil
2 tsp. finely chopped garlic
3 c. meatless spaghetti sauce
2 carrots, finely diced
4 ribs celery, finely diced
1 med. onion, finely diced
1 zucchini, finely diced
2 c. finely diced lean beef
1 lg. potato, finely diced
1/4 c. pepe pasta (very sm. grains of pasta)
3 fresh Italian plum tomatoes, finely diced
Salt & pepper to taste
1/2 bag fresh spinach, washed, blanched & chopped
Bring stock to boil, add soaked beans; simmer until beans are almost tender. Add basil, garlic and spaghetti sauce. Simmer for 15 minutes. Add carrots, celery, onion, zucchini and meat. Simmer until vegetables are almost tender, stirring constantly. Add potato and pasta, stirring until both are cooked. Add tomatoes, simmer until cooked and season soup with salt and pepper to taste. Before serving, stir in spinach and cook briefly.
Serves 15.
MINESTRONE SOUP
1 pkg. minestrone or bean bag soup mix
2 cans whole tomatoes
3 lb. browned ground beef
Salt
Garlic salt
Alphabet macaroni
1 to 2 lg. onions, chopped
Soak beans overnight in about 4 quarts of water. Add all but macaroni. Cover, simmer 2 to 3 hours. Add macaroni. Cook until tender.
QUICK & EASY MINESTRONE SOUP
1 onion, chopped
1/2 stick pepperoni, chopped
1/2 lb. fresh spinach, chopped (or broccoli stalks, chopped)
2 cans Campbell's minestrone soup
1 can butter beans
1 can green beans
Heat for 1/2 hour and serve.
