does fruity-flavoured wine goes well with all/most Japanese cuisine?

Japanese cuisine is very peculiar and light.No extreme flavors or high condiments.Easy cuisine and simple.So, my experience tell me that white wine is the best.I should say a dry one a little chilly.Try it.

mighty_whitney got it bang on with the Bonny Doon pacific Riesling was born one night when the winemaker and other oenophiles were having sushi and were lamenting that no winery had yet produced the perfect sushi wine. After the evening of discussing the what the principles that a sushi wine should have the winemaker set out to develop the Pacific Rim Riesling.
However Rieslings have that love it or hate thing going, if you are in the hate it crowd I would choose a Gewurztraminer to pair with Japanese cuisine. The off-dry aromatic white is a great balance to spicy flavours.

First of all, relative to several above Answerers: Sake is a beer, not a wine (even though the hoi polloi call it rice wine).

Our experience has been the best grape wines in general for sushi and sashimi are good sauvignon blanc whites or good bone dry rosés. For other dishes we usually follow the European model of reds with most meats, whites with most fish and chicken, although we'll often do a medium red with sweet sauced chicken dishes like katsu.

Japanese plum wine with most noodle bowls.

It is a type of Wine called Plum Wine and it is delicious. I am sure you can buy it at a finer liquor store.

I would say beer instead. "Asiho" beer is good. But sake (rice wine) or plum wine is an option as well.

Good guess- my choice would be a dry reisling. I recommend Bonny Doon "Pacific Rim".
