Shrimp Salad
4 servings 25 min 10 min prep
1 teaspoon extra virgin olive oil
2 tablespoons chopped cilantro
3 tablespoons fresh lime juice
1/2 teaspoon minced garlic
1 small green onion, chopped
1 tablespoon hoisin sauce
1 pinch white pepper
1 lb large shrimp
1 tablespoon red pepper, minced
bibb lettuce
In a large bowl, whisk the lime juice, green onion, cilantro, olive oil, garlic, hoisin sauce, and white pepper together to make a marinade.
Peel, devein, and clean the shrimp, rinse in cold water and set aside to chill for 30 minutes.
Cook the shrimp in a non-stick skillet on medium heat with 2 tablespoons of the marinade for 2 to 3 minutes—it's done when it turns pink.
Pour the skillet contents into the marinade bowl add the red pepper, toss and set aside to chill.
Place 4 serving dishes with the shrimp to chill.
To serve: On each of 4 chilled serving plates, place a bed of Bibb lettuce, spoon the shrimp onto the lettuce.
Serve.

Greek Pasta Salad with Shrimp & Olives
3/4 lb tomatoes, chopped
1 large red bell pepper, chopped
1/4 lb feta cheese, crumbled
2 tablespoons dry white wine
1 tablespoon thyme
6 green onions, chopped
1/2 cup olive oil
3 cloves garlic, minced
1/2 cup kalamata olives, chopped
1/4 cup lemon juice
3/4 lb pasta, cooked
3/4 lb bay shrimp, cooked
Mix first 10 ingredients in large bowl.
Add pasta and shrimp and
toss to blend.
Season to taste with salt and pepper.

Blue Cheese Caesar Salad With Chicken or Shrimp

1 tablespoon champagne vinegar
2 tablespoons lemon juice, freshly squeezed
1 1/2 teaspoons garlic, minced
1 egg yolk or egg substitute
1 tablespoon Dijon mustard
1 dash worcestershire sauce
1 pinch pepper, ground
1 cup olive oil, pure
1/4 cup gorgonzola, crumbled, extra for garnish
2 tablespoons parmesan cheese, grtaed
12 cups romaine lettuce, torn, lightly packed (about 2 heads)
3/4 lb chicken breasts, shredded (optional) or shrimp, peeled and cooked (optional)
6 tablespoons parmesan cheese, grated, plus extra for garnish
Put the vinegar, lemon juice, garlic, egg yolk, mustard, Worcestershire sauce, and pepper in a blender and blend until well mixed.
While the machine running, add the olive oil, by drops, as the mixture emulsifies, in a thin, steady stream until all the oil is incorporated.
Pulse in the Gorgonzola to taste (the riper the cheese, the less you will need) and the Parmesan.
Scrape into a bowl, cover, and refrigerate until needed. About 1 1/3 cups. (The dressing keeps, refrigerated, for 2 to 3 days.).
Put the lettuce in a bowl with the chicken or shrimp, if using. Pour the dressing over and toss well.

I use plain yogurt with a bit of lemon juice, salt and pepper when I'm out of mayo. You could also try just a regular salad dressing, like ranch or - here's an idea - make a shrimp louie instead, and use a really quality thousand island dressing. Quarter some hard boiled egg when you serve it over a bed of lettuce - primo!

Okay per medium bag of frozen shrimp.
1 cup of french extra thick dressing
1 tablespoon of kikoman(chinese soy)
1 tablespoon of chopped olive green, or mixed
1 cup of celery leaf
1 cup of ranch cheese soft dip
1 cup of tomato diced
mix all with a wisk
Add taste of spices
Add shrimp and leave one each center piece per person
Add some buttery crackers
Add some rye or garlic crackers
Place bread rolls in baskets
Add celery sticks, carrot sticks, and radish slices
Serves up to 50 sandwiches, full roll. Other tastes add
lettuces leaf, spinach leaf, or your favorites. This one is from
the Louisiana purchases club 200th celebration of riverboats.

A lower fat option could be low fat creme fraiche, a squeeze of lime juice, salt and pepper and perhaps a touch of tomato puree.

garlic & herb seasoning packet mixed w/ olive oil, ranch or caesar salad dressing. any one of those are actually quite good.
my mom likes to experiment w/ her cooking & it always ends up delicious. she's actually tried all three of those...at different times of course.
