i have and know a recipe for the dough but am unsure of how to "shape" or form the actual roll/bun or loaves. am i to flatten it with a rolling pin ? or just grab a chunk and roll it in my hands ? or is there someway i have no clue about ? i've tried both ways a rolling pin caused them to be very small good but small and forming a ball in my hands were to big once risen for the second time and burn on the tops ? ant tips or tricks or methods would be greatly appreciated.

i let it rise twice before baking it but i was looking for a technigue on actualy shaping or forming the rolls or loaves. i belive this has a lot to do with how it will or wont rise.

It all depends on the bread your trying to make. However, I'll answer 'generally'.

You should be rising the dough. Punch it down and do a little kneading. Shape it at this point into either the size loaf or the rolls. Then you rise it a 2nd time. After it rises the 2nd time, you should be putting it in the oven and not trying to form it.

make sure you pound it done to not have air pouches in the bread or rolls, it rises then pound it down then let it rise after you shape it! try something differnt with each bread
