ok, i fried chicken last night and want to do like country fried steaks tonight. can i use the oil from last night or will it get me and my man sick??? can i re-use it 3 days from now? a friend of mine told me it was ok, and would just give flaver to the food. is that true??

Yes... I've been using the same oil for 3 YEARS to fry my chicken. I filter it each time through cheesecloth and store it in a glass jar in a cool dark place. NO health problems.
I deep-fry my chicken in a wok... and season the chicken with quite abit of cayanne pepper... so the oil is VERY flavorful.
Dang... now I'm hungry for some Chicken Fried Steak !!

It is ok to use last nights chicken oil on your country fried steaks. You can also use it three days from now, however I would drain the oil each time to clean it from any old crumbs. They can eventually turn black from over heating making your oil turn as well. You will not get sick. I also reuse fish oil to cook french fries. The potatoes seem to clean the oils.

If you keep it in a covered container, used frying oil should keep for a couple of weeks. You should let it cool after use, then strain it through cheesecloth (to remove any small bits of food). However, you shouldn't use it more than 3 times...there's no way to remove ALL of the food that you've previously fried. This will cause the oil to have a lower burning point (especially if you've fried food that contains alot of its own fat, like chicken). It may result in over- or undercooked food, or even worse, you could burn down your house!

Was the oil refrigerated after you used it? Remember there could be bits of food left in it that could spoil. What I have done in the past is to freeze the oil (especially good idea if you like fondues and purchase the more expensive oils and want to re-use at a later date.

i worked for a grocery store in their deli dept...we fried chicken and other things in the same oil for weeks and weeks...they do have a filter system to take out big pieces of breading or what not but other then that they didnt do anything to it...i would use some type of strainer to get big pieces of things out of it but yes it is ok to use again.i reuse my oil all the time and never get sick from it.yes say if you fried fish in the grease and then you used it again for something else it might give the other things a fish flavor.but all in all i would say yes use the grease again

We have a deep fryer and we only change the oil every month or so, whenever it starts getting dark and sludgy. And the fryer sits on our counter all the time, covered. It'll be fine, just get the bits out of the oil first.

Yup. You can reuse it, it will be just fine. The only time I won't reuse oil is if you used something with a very strong flavor that you don't want to carry over. Like, if I fry fish, I don't reuse the oil again or else everything else just gets that flavor.

Used Oil can be saved in an air tight container for several weeks in a cool place. I'd strain the oil before reusing. :)
