I like to cook Mahi Mahi in a Butter and Red Stripe (Beer). Basically a dolphin steak in a bottle of beer with a quarter stick of butter, maybe more if you like. You cook at a Medium/High Temp. The beer carmelizes, if you can burn it just right. It is easy to make and you can serve over rice (I prefer white rice, but brown is healthier). I like to make buttered asparagus or fresh green beens as a side. Fresh fruit is also a great addition to this meal. Depending on your choice. White wine and Beer both go well with this meal. Especially Red Stripe, Sapporo, Asahi, or Harp.
As far as Chicagoland try Tsuki. It is the coolest place I have ever taken a woman. (Joe's Seafood is not bad at all either the same woman enjoyed this better) Oysy is great for less $$.

My favorite romantic meal would be Baked or Grilled chicken with honey BBQ sauce with some steamed white rice and snowpeas and baby corn.Put some Honey BBQ sauce over the rice with some Arbor Mist wine!

Spicy Italian Sausage with Shrimp and Pasta
Makes 4 to 6servings
Ingredients:
1 pound hot Italian sausage, cut into thirds
2 tablespoons garlic, chopped
1/4 cup fresh basil leaves, shredded
1/2 cup dry white wine
1/2 cup canned chicken broth
12 to 16 ounces raw medium shrimp, deveined
6 tablespoons olive oil
4 tablespoons pine nuts, toasted
1 pound penne pasta cooked al dente, drained
Preparation:
In a large, heavy bottom sauté pan, brown sausage in 2 tablespoons olive oil, leaving slightly undercooked at center. Remove sausage and reserve in warm place.
Add garlic to hot pan and cook while scraping bottom and not allowing pan to burn. Add shrimp and season with salt and pepper. Toss shrimp until shrimp turn color and are cooked, 3 to 4 minutes. Remove shrimp from pan and set aside.
Add wine and broth to pan and boil until reduced by half. Add the reserved shrimp, sausage and its juices, basil and cooked pasta.
Toss all together and heat through. Check seasoning. Drizzle with remaining olive oil. Serve sprinkled with pine nuts and grated cheese.

for me is this dish that i cook. it's A garlic Lime chicken with white rice and steamed veggies and a glass of white wine. I love it because its easy, quick, and the lime actually acts like a bad breath killer....so it's perfect for that kiss after dinner!
