It's never happened to me, you've either left it too long and it's gone mouldy, or there's a green shoot in the centre you've not noticed. or you've used a dirty knife.

Wow. I have never seen this happen. What did you use to chop it?
Anyone out there have an answer? I'm curious too!
Just looked on Internet and discovered there is a type of garlic that is naturally green. Maybe you were using this type without realizing it.
I agree with Lene H
Are you talking about the tiny piece of green in the heart of the clove/bud?

Sometimes the heart is still green. If you don't remove it, you'll have little green pieces in your chopped garlic.

Or are you talking about the garlic that's sprouted?

What are you doing with it after you chop it? It could be a reaction to the container you put it in.

it turns green if its left for a prolonged period outside ( algea grow on the garlic)
