SALSA GUACAMOLE
Guests will rave about this combination of fire roasted salsa and guacamole -- you'll make it again and again!
Salsa:
1 can (14.5 oz) Muir Glen® organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalapeño chile, seeded, finely chopped
Guacamole:
3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped
In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.
Serve with tortilla chips as desired.
Makes 12 servings (1/4 cup each).
Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

Easy Salsa
Yield: 4 1/2-5 Cups
Ingredients
4 md tomatoes; chopped
1 md onion; chopped
1/4 c salsa, chunky
1/2 ts salt
1/4 ts pepper
1/4 c chilies, green; canned,
-chopped, optional
1 pk tortilla chips; optional
Instructions
In a large bowl, combine the tomatoes, onion, salsa, salt and pepper.
Add the chilies if desired. Cover and refrigerate for several hours.

4 Roma tomatoes, cut up small
1 med. purple onion, cut up same size pieces as tomatoes
1/4 to 1/2 jalepeno pepper, seeds removed and chopped tiny
1-4 sprigs of cilantro, fresh (or parsley) chopped fine
1 tablespoon lime juice
Salt and Pepper to taste.
Combine and eat. I prefer no refrigeration because the tomatoes get soggy but it should not be left out on the counter for long either. If you like avacado you could chop one of those up and put in it or mash an avacado and combine with salsa to make guacamole. This is my favorite!

diced tomatoes, onions, one green chile or jalapeno (without the seeds, those make it spicier) & some chopped cilantro. add a small squirt of lime juice, salt, pepper or even a little garlic salt if you want (all to taste) & voila, instant salsa! Btw, an easier thing to use instead of taking time to chop up a chile/jalapeno & tomatoes.....buy a can of Rotel....it's diced tomatoes & chiles all mixed together :) Have Fun!

In a blender combine 2 jalepeno peppers seeded, one onion, handful of cilantro, chop add large can diced tomatoes pulse twice and turn into bowl, season with salt, pepper and more cilantro. Chill or not it is good.

Simple:
Take some tomatoes and throw them on the stove (not pot, just burn them). Then chop some cilantro and jalapeno pepers. Smash everything in a bowl and it's ready to go.

My grandfather always uses a tomato sauce with sliced onions, potatoes, and he puts cream cheese and other store bought salsa on top and mixes it!

1 can of dice tomatoes, 1 can of green or jalapenos chilis, chop green onions, 1T of chop cilantro, 1 clove of garlic chop.juice of 1/2 lemon.salt to taste. good luck

You could use Heinz chilli sauce which is not at all hot ... and freshen it up with cilantro, chillies, and some fresh tomato (but very ripe).
