Let me throw something at you. When do you usually see him?
Where you do usually first see him...before/after work...at work? And what type of result are you looking for this to achieve? If in the morning, then maybe make him a breakfast sandwich & a cup of coffee? At work, cook something at home you can bring ffor a pinic lunch...after work, then do something different for dinner...why not a 'pinic' dinner?
Hey, guys like food...and they like it more when someone else not only buys it, but cooks it too!!! If you're going to do something that involves cooking, why not make an "event" out of it at the same time where he'll be not only impressed with the food, but with the "presentation" as well.
But, if you're nervous about this, cookies are a great place to start. Not matter if he likes them or not, he'll be impressed.

Go with just the cookies.
Guys don't have the proper utensils nor covers for pie or cakes. Cookies are easier to eat and enjoy.
Start with the cookies, at a later date you can go with pie or cake, but not at the same time.

I'll answer this even though I'm a girl. I think you should. I make cookies and desserts for my guy friends and they all love it and they all love me for it. I think you should do the pie and the cake as well. He'll just love you even more.

I agree with what several others have already said. The cookies will make a big impression and send a clear message, guaranteed. Anything beyond that on the first occasion will seem like overkill, i.e., more like a demand than a suggestion.
