I'm off today, but my wife, a nurse, is working a 12 hour shift today. Trying to decide what to make us for supper. My options are:

grilled chicken;
tacos;
hamburgers;
or order out for pizza or chinese food.

Brown the chicken on each side of the breast by placing it in a skillet with olive oil on medium heat. If you have cream of mushroom soup, place some cream of mushroom soup with a can of milk on top of the chicken breast. Then place some sliced onion on top of each breast. You would then season it with lemon pepper or whatever seasoning you woud like and cover it with foil. Put it in a pre-heated oven (375 degrees) for approximately 45 minutes. You could then cook some brown rice or sliced red potatoes and some fresh vegetables that she likes to go along with the meal. The cream of mushroom soup makes an excellent gravy for the potatoes or rice. You may even want to make a great salad instead of using the lettuce for tacos or hamburgers. She is a nurse...let's show her you know how to cook healthy meals! :)

take grilled chicken and sprinkle it with oregeno. Then cut it into strips and make slouvaki. Serve it on a rice bed with ceaser salad on the side. It will be a nice treat, quick, and most of all tasty.
