I think I need an answer from someone who actually makes them up. Obviously it includes olives and olive oil so that is a non-answer. Seems like there were two kinds of olives and slices of what appeared to be garlic.

as the 1st poster said, olives and oil.

There might be some herbs added (oregano and thyme are favourites). Likewise, the olives might have been marinated in garlic along with the oil.

Sometimes the olives are "de-stoned" and the cavity filled with pimento or anchovy.

Additional info:
I do "make" them up - I own a restaurant !!! I already said that sometimes they are marinated in garlic. There are about 47 varieties of olive - some are black, some green.

Some studies say that there is often urine in olives/nuts/crisps that are put out in bars as well.
