Most wheat products would have Carbohydrates in them so the carbs break down into fat and sugar, so short answer yes i suppose it would..

I had to give up wheat due to an intolerance.

No foods are in themselves fattening per se. It all depends on how much energy you expend vs how much you take in. Wheat sensitivites however are very common and often make people fat. Also, over indulging on carbohydrates is likely to make you fat if you are not using all the energy provided. If you eat only whole grain foods you will be less likely to overeat.
