EZ Fudge
1 (12 oz) bag chocolate chips
1 (16 oz) tub chocolate frosting
1 tsp salt
1 tsp vanilla
Microwave chocolate chips 1-2 minutes or until melted. In same bowl, stir in frosting, salt, and vanilla. Mix together until it loses its glossiness, pour into greased pan, let cool, cut into squares.
Cream cheese or vanilla frosting also works if making multiple recipes, subbing one or two of the chocolate frosting for another flavor.

397g can Carnation Condensed Milk
150ml (5fl oz) milk
450g (1lb) demerara sugar
115g (4oz) butter
Variations:
Add the following at the beating stage.
Rum and Raisin
Stir in 2tbsp of dark rum along with 115g (4oz) of chopped raisins.
Fruit and Nut
Stir in 85g (3oz) of mixed dried fruit and chopped nuts.
Chocolate
Stir in 175g (6oz) of melted plain chocolate
Grease and base line an 18cm (7in) square tin with baking parchment.
Gently heat all the ingredients in a large, nonstick saucepan, stirring until the sugar dissolves.
Bring to the boil and simmer gently for 10-15 minutes, stirring continuously, until a temperature of 116ºC (240ºF) is reached on a sugar thermometer. Alternatively, test the fudge by dropping a little into a jug of cold water. If a soft ball is formed, the fudge is ready.
Remove from the heat. Beat until thick and grainy (about 10 minutes). Pour into the prepared tin and leave to cool. When cold, cut into squares.
Fudge can be stored for up to 1 month in an airtight container. :) YUM!

900g (2lb) Sugar
225g (8oz) Unsalted Butter
1 large tin Evaporated Milk
Water (quarter of the volume of Evaporated Milk)
Vanilla Essence
Place the sugar, butter, milk, water and vanilla essence into a saucepan.
Heat gently until the is fully dissolved.
Rapidly boil the mixture to a temperature of 114 - 118°C (238 - 245°F) the soft ball stage.
Remove from the heat and allow to cool for 2 - 3 minutes, then beat rapidly with a wooden spoon until the mixture thickens and becomes rough in texture.
Pour the mixture into a 20cm (8 inch) baking tin, lined with silicon paper.
Allow to cool a little before marking into squares with a knife.
Leave in a cool place to set, cut into squares and store in an airtight container.

Ingredients:
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
1 cup chopped walnuts
1 teaspoon vanilla extract
Directions:
LINE 8- or 9-inch square baking pan with foil.
COMBINE morsels and sweetened condensed milk in medium, heavy-duty saucepan. Warm over lowest possible heat, stirring until smooth. Remove from heat; stir in nuts and vanilla extract.
SPREAD evenly into prepared baking pan. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.

No fail microwave fudge
Package of semi-sweet chocolate chips
Can of sweetened condensed milk
2 teaspoons butter
microwave 2 minutes at a time until chips are melted
spead in foil lined pan--chill--eat.
Add nuts, raisins, dried cherries.for variety
