Taco Junk Recipe WOW!! This is SO incredibly tasty!! I got this off the Weight Watchers website. by marlene1964

1 lb lean ground beef or ground turkey
1 (16 ounce) can black beans
1 (16 ounce) can stewed tomatoes (chopped)
1 (1 1/4 ounce) envelope taco seasoning mix
1 (1 ounce) envelope ranch dressing mix

Fry meat until just done.
Drain off excess oil.
Rinse with hot water.
(sounds GROSS, I know, but if you're watching fat, this is an excellent way to get it out of there and you don't notice a difference in flavor!) Return meat to pan and add remaining ingredients.
Cover and simmer on low for 1 hour.
(I actually found that simmering for about 50 minutes worked well. It thickened it up just great).
Estimated POINTS for Weight Watchers is 2 points for a 1 cup serving. You know, this is just what the recipe said. I have NO CLUE what points are. I did WW back before the fiber cap. Maybe that's where these low points come from. As the reviewer states -- best to check it yourself! :).
I took warmed flour tortillas and wrapped this up in them with a plop of sour cream and a bit of grated cheese.
My daughter took corn chips and used it as a dip.
It's sooo good!
You can also add Salsa for some extra flavor it you'd like.
Many different things you could do with this recipe!

Here is a recipe for tasty, healthier, baked chicken fingers. I made it up after trying several recipes so I don't have exact amounts of ingredients. It depends how much chicken I have.

Boneless skinless chicken breasts
Dry bread crumbs
Finely crushed cheese crackers (Use your favorite kind. I use Cheese Nips)
Mayonnaise
Salt and pepper to taste

Mix equal parts bread crumbs and cracker crumbs. Add salt and pepper to taste. (I usually don't add salt as the crackers are usually salty enough) and put in a shallow dish. Slice the chicken into strips the size you like. Coat the chicken strips with mayonnaise. ( I just use my CLEAN fingers for this, a little messy, but easiest way!) Coat with the crumb mixture. Place on a baking sheet and bake at 425F for about 20 min. turning once about halfway through cooking time.

Twinkies are considered junk food. I have had some great twinkie recipes!

Here's an easy recipe:
Hostess Twinkie Dessert

1 box Twinkies
1 can vanilla pudding
2 bananas, sliced
1 (21-oz.) can cherry pie filling
Whipped cream or Cool-Whip (8 oz. container)

Slice Twinkies length-wise and put into 9x13 inch pan.

Layer vanilla pudding, bananas & cherry pie filling.

Top with whipped cream or Cool-Whip.

Refrigerate.

Note: May use 1 (6-oz.) box instant vanilla pudding, mixed according to box directions, in place of can of pudding.

Mini pizza

Take garlic flavor flat pita bread (or plain)
brush with olive oil
Top with Hunt's flavored tomato sauce (I use the garlic and basil one)
Little canadian bacons
mozzarella cheese
whatever veggies you like
Bake for about 10-15 mins on 350. It's delicious.
