Since you aren't going for all the extras, why not spend a few extra minutes on the actual ceremony; you know, the "Do you take...." part?
Your ceremony should be the highpoint of the wedding. It speaks to your guests of your love & relationship. What do you want to say to them? To each other? To God?
Experience tells me that those couples who do, have never felt their time was misspent. Make your ceremony mean something special to you. Make it truly your own.

I'm sure there are better ideas, but here's mine : Create a combination of class & goodheartedness.
Organise for a small party, with only best friends of both of you. Ensure there is the best of food, the best champagne, lovely music you both love - maybe a live pianist AND a lively band - you'd want to be inspired AND dance & have a bit of fun !-, aromatic candles, etc etc. Keep it small in scale & large on style.
And before you leave for that awesome party, go do a great deed. Go to an orphanage / old age home / whatever, and do a small party with a cake & simple wine for them. Have fun with them. Donate something useful to the place.
At least thats what I'd do when I get married. I'll remember the day for the fun AND the good feelings, for the simplicity & the pampering.

I think before you stated you were in the Dominican?? I would check out the Hilton or a hotel and have the whole thing there. I want their for vacation and there were a lot of local people getting married there. It's great because people can eat and drink what ever they want and the reception is in the pool!!

I agree with you I did a very nice...no fuss wedding. It is possible to reduce the stress and fussiness without getting rid of the ambiance.
