My goal this year is to cook 300 new recipes. So far I am at 17 and counting...what recipes do you recomend I add to this list?

Just a few of my favorite recipes. All easy to find on the internet and super easy to make. I love your idea to make 300 new recipes. I should try that sometime if I can get my husband away from Hamburger Helper once in a while. XD

King Ranch Chicken Casserole

INGREDIENTS
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chile peppers (rotel)
1 (12 ounce) package corn tortilla chips (Frito's work well)
3 cups cooked, diced chicken breast meat
1 onion, chopped
1 green bell pepper, chopped
8 ounces shredded Cheddar cheese
1 1/2 teaspoons chili powder
1 teaspoon garlic salt


Preheat oven to 350 degrees
Combine the chicken soup, mushroom soup, broth and tomatoes with chiles. Set aside.
Lightly grease a shallow 3 quart casserole dish. Layer 1/2 the tortillas, 1/2 the chicken, 1/2 the onion, 1/2 the bell pepper and 1/2 the cheese in the casserole dish. Pour 1/2 of the soup mixture over the layers. Repeat the layers of tortillas, chicken, onion and bell pepper; pour the remaining soup mixture over the top, then top with the remaining cheese. Sprinkle with chili powder and garlic salt and bake for 30 to 45 minutes.



I make this all the time, but I skip the onions and peppers- and add extra cheese.

My husband came up with a wonderful seafood alfredo dinner that's very simple. Get 2 jars of Bertolli alfredo sauce, 1 pound of imitation crab, and 1 lb of tailless frozen shrimp (Kroger sometimes has a 2 for 1 sale on it). Let the sauce heat up, then dump in the crab and shrimp. While it's heating up, make about a pound of your favorite pasta (we like either alfredo noodles or angel hair pasta. Once the pasta is cooked and drained, and the sauce with the seafood is heated, mix the two together. It makes enough for an army, so it's good for leftovers, but you could cut down the recipe fairly easily.

Pasta is always a good dish.
Cajun Chicken Pasta
4 ounces linguine
2 boneless skinless chicken breasts, cut into thin strips
2 teaspoons cajun seasoning (or to taste)
2 tablespoons butter or margarine
1/4 cup chopped green bell peppers
1/4 cup chopped red bell peppers
4 ounces sliced mushrooms
1 thinly sliced green onion (1 to 2)
1 cup heavy cream (1 to 2 cups)
1/4 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/8 teaspoon garlic powder
1/8 teaspoon black pepper

In a large pot with boiling salted water cook pasta until al dente; drain.
While the pasta is cooking, place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat saute chicken in butter until chicken is tender, about 5-7 minutes.
Add green and red bell peppers, sliced mushrooms and onions, and cook for 2-3 minutes .
Reduce heat; add heavy cream, basil, lemon pepper, salt, garlic powder and pepper and heat through.
In a large bowl toss linguini with sauce.
Sprinkle with grated Parmesan cheese if desired.

Breaded Pork Chops & Gravy:
Prep Time: 15 minutes
Cook Time: 90 minutes

4-6 thick bone in pork chops - 3/4"
2 large eggs - wisked
2 cups unflavored bread crumbs
1/2 tsp salt
1/4 tsp pepper
2-3 tbls oil
Boiling water
Deep frying pan / electric frying pan (your preference)

1/2-3/4 cup flour / 1 to 1-1/2 cups cool water

Two separated bowls one for bread crumbs, one for egg.
Mix bread crumbs, salt & pepper. Wisk eggs well.
Dip pork chops in egg. Place pork chop in bread crumbs-coat well. Heat oil in frying pan. Fry porkchops on both sides until well browned (dark brown). After all chops are brown, add boiling water enough to cover chops.

Cover, reduce heat and simmer for 90 minutes. Until pork chops are very tender. You may have to add a little liquid as they cook.
You don't want it to reduce too much so that you can't make gravy. You at least want a 1/2" of liquid at all times.

Remove pork chops.
Heat liquid until boiling. Make a flour and water mixture for gravy.
Flour & water mixture should be a little thinner than syrup.
Slowly add mixture to boiling liquid, still constantly. Once you get the consistency of gravy you want, reduce heat & cook for 7-10 minutes, stirring often.

Serve with mashed potatoes, choice of vegetable and country biscuits.

This makes for an excellent dinner. Preparation is very simple.
