What would you put in your salad and what makes a good salad - recipies if you can. Thx :)

rocket spinach red and yellow peppers pommdorino tomatos(sainsburys ones r delicious)spring onion(or red onion) a light vinagrette dressing(as i am always on a diet)with home made coleslaw and a low fat pitta bread with mozzarela and basil leaves roasted on top like a pizzadelicious and very low in fat

Here are some favorite family recipes from a family cookbook I assembled last year. Really, I think any salad is good as long as the ingredients are fresh and good.

Grandma’s Coleslaw

3 ½ tbsp vinegar
3 tbsp half & half
½ tbsp sugar
1 small cabbage, shredded
1 can crushed pineapple

Blend and serve. (Flavors probably “marry” better by sitting in the refrigerator for a while.)

Grandma’s Lettuce and Banana Salad


Prepare any lettuce in the usual manner and add sliced banana. Dress with a sprinkling of sugar, a little salt and pepper, and either sweet or sour cream. Dairy sour cream, which is thick, must be diluted with lemon juice to the thickness of heavy cream.

Aunt Doris's Pea Salad


1 can peas (I use frozen)

2 hard-boiled eggs, diced

American or Colby-type cheese, diced (probably ¼ to ½ cup)

onion, grated (about ¼ cup)

2 or 3 small sweet pickles, diced, or pickle relish

1 tbsp. or so of mayo, enough to make it stick together, but not soupy.

A little salt and pepper

Assemble and chill.

SIMPLE GREEK SALAD

Julienne a Green Pepper and red onion. Place in a bowl. Add 3 tomatoes cut. Add 1/2 jar kalamata olives. Cut and cube Feta Cheese. Sprinkle a bit of oregano around the bowl of veggies. A little mince garlic. Add some olive oil and lemon juice. Salt & pepper to taste.

If not zippy enough in flavor for you then you can add some italian dressing or vinegar and Mrs. Dash original (yellow cap)

All I do is just make a normal salad with the various types of lettuce (spinach, romaine, etc.--no iceburg) and chopped up baby carrots, baby tomatoes, etc. Put onions in if you want them. I get organic or locally grown, which always tastes better because there are no pesticides.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Caesar Salad

1/2 cup KRAFT Classic Caesar Dressing, divided
4 small boneless skinless chicken breast halves (1 lb.)
1 head romaine lettuce, torn into bite-sized pieces
1/2 cup croutons
1/4 cup KRAFT 100% Grated Parmesan Cheese



POUR 1/4 cup of the dressing over chicken in shallow dish. Refrigerate 20 min. to marinate. Drain; discard marinade.
PREHEAT grill to medium heat. Grill chicken 10 to 12 min. or until cooked through (170°F), turning after 5 min. Cut into thin slices.
TOSS lettuce with remaining 1/4 cup dressing, chicken slices, croutons, and cheese.

This is my favorite... I love it. Hope you like it...

My favorite salad is:

Chopped romaine lettuce
Sun dried tomatoes
Marinated mushrooms and artichokes
Fresh (and the key word here is FRESH) mozzarella cheese .. either cut into large chunks or the small fresh mozzarella balls.
Balsamic vinaigrette

Toss it all really well and serve with some good bread or breadsticks!

A reallly good Honey Mustand. I also like oriental dressings as well. Anything that isn't normal store stuff like Ranch, Bleu Cheese, Thousand Island, VInegar and Oil, etc. But to each it's own - so there is no 'bad' answer.

I like to make my salads the following way.
lettuce
tomato, sliced
cucumber, sliced
carrots, sliced
celery, sliced
green pepper, cubed
green onions, sliced (including the green part)
salt and pepper to taste
salad dressing
As to the amount of each depends on how many will be eating it.
I like ranch, itallian, oil & viniger and other salad dressings.

My fav salad is:

two roughly chopped celery

one roughly chopped tomato

five roughly chopped spring onions

quarter roughly chopped cucumber

a generous handful of finely chopped corriander

mix all together with a dash of salt and a good dollop of natural yogurt. could add red onion for a bit of colour.

Easy Peesy and yummy!!

TOMATO AND CUCUMBER SALAD WITH BALSAMIC DRESSING
1 cup rosa tomatos (cut into halves )
a 10cm piece of cucumber (sliced )
half an onion (sliced )
black olives (optional) toss together add dressing and mix to coat salad well . For dressing mix
3tsp sugar
1tsp salt
1tsp coarse ground black pepper
1/4cup olive oil
1/4cup balsamic vinegar
