Preservation in regards to food is all about increasing shelf life. To keep the food from spoiling for as long as possible.

The oldest examples of preservation would be drying and salting. Drying was primarily used with lower moisture content items like herbs. Higher moisture content items like meet would cut into thin strips, rubbed with salt and dried. Laker smoking was also used to preserve meat. More modern processes for preservation are canning and vacumn packing.

Any processed food you eat will have some type of preservative in it, even unprocessed foods are treated to preserve them. Fresh fruit is often waxed, to both improve it's color and shelf life. Package meat has chemicals added to do the same thing. If you read a list of ingrediants on almost any edible product there will always be at least one ingrediant commented as a preservative. These would include bread, cereal, chips, cookies, cake.

Preservation is when you prevent food from going bad.

You can use a food saver or other vacuum sealer to preserve food.

My dad preserves meat, b/c he's the only one that eats it so there's always left over. Um...you could preserve pretty much anything that is perishable. Freezing bread is another example.
