If you fry chopped fresh garlic, onions and sprinkle soy sauce in the peanut oil, you'd have an appetizing aroma wafting all over the kitchen - those are the basic in many Chinese dishes.
The aroma of "fried rice" is further enhanced when the diced ham, (or roast pork), pre-cooked shrimps, are fried together with the rest. The egg-mix tops off an unmistakable scent that can only be "yangchow fried rice" - a Cantonese specialty.
(the pinch of msg DO NOT alter/enhance the smell)

The secret is a wok over a very high heat. High heat creats a smoking flavor and is very unique in chinese cooking. And plus the instant chicken broth powder does really gives a very good flavor, so you don't really need much of any other seasoning to flavor it more. But the end of the meal you will be really dehydrate cause the msg though.

Hi there !
You have to have the "breath of wok" - "wok hey", in cantonese, cooking foods on the wok at smoky point makes the food turns out great. Secondly, the sauce ie. soy sauce, soy sauce, sesame oil, and minced ginger.
However, often at times, I'd prefer fish sauce to the above as a dash of that makes my chinese fried rice taste heavenly :)
Cheers,

It is because they fried the ingredients over very high heat. If you heat up the wok over the high heat till you see some smoke coming up then add peanut oil (cold oil on hot wok) then stir fry the ingredients over high heat, you would make yourself + your kitchen smell good too.
It is just like your kitchen smell good when you're baking cookies in your oven.
