Ok what type of vegan you are helps determine the answer -
There is cottage cheese and fruit, bean/fruit salads, soup, vegie burger.
Look for ideas on sites for vegetarians.

a salad of tomato, lettus , onions and thyme
a dish of fried onions adding green pepper sweet or chilly and garlic fried one by one, then add to it boiled potatoes cut in small pieces with a ltl curry and ginger , if u will add some tomato sauce and a ltl thyme for the flavor

I like some whole wheat crackers with hummus. And some veggies, as I like to dip my veggies in hummus.
I also like to eat some fruit, vanilla soymilk, and some brown rice drizzled with sesame oil and soy sauce.
