To make the toasted rice that is sprinkled on Thai and Vietnamese salads just toast a couple of spoonfuls of uncooked rice in a hot dry pan. Cook until golden brown ( some of the grains will start to pop ) then leave to cool before crushing it in a pestle and morter.
