I think I would say Shark fin soup is one of them (China's National Dish), there are different ways to prepare shark fins and it is always an expensive ingredient.
In a 10 to 13 courses Chinese banquets, there are four kinds of expensive food that mostly would be served,
Abalones
sea cucumbers
shark fins
fish maws

In all my travels in China throughout the country, there are many, many different regional dishes, nearly all of which are very good.
Fortunately, there is also one dish that I like very much that is on nearly every restaurant menu. It is Kung Pao Chicken. It is basically chicken cubes, dried chillies, peanuts and sauce. Sometimes it is cooked slightly differently or the peanuts are chopped or whole or the level of spiciness is different, but it is the same dish.
About the only single dish I have seen throughout the country.

I pretty sure that the modern Hamburger would be considered the American national dish. Along with maybe french fries and like she said Apple Pie

not sure if they only have 1 kind of national dish, but the Chinese are well known for their fried rice, peking duck, chapcae (veggies stir fry), fu yung hai (crab omelet), general Tao's chicken, chow mein, fried noodle, crab soup, and many more
