First of all, I wouldn't make the party any longer than 2½ hours! Let it be over w/ them wanting more, not wishing it were over!

It really depends on your budget and the type of party you're having - is it a sit down? is it a buffet? is it just a house party? If it's 100+ people, I would suggest a non-complicated buffet manned by at least two staff (to ensure that there's enough of stuff and that they don't make a mess of things).
Think of making a pasta bar where people can assemble their own food. Have several kids of pasta: speghetti, fussili, penne, ravioli and match them with different meats: ground beef, meatballs, chorizo sausage, other sausages and different veg: roasted pepper, spinach, celery, carrot, peas and finally different sauces: bolinaise, alfredo, simple olive oil etc., and then final fixings of parmesia, S&P, and hot peppers. Next serve some traditional caesar salad, a mixed green salad and maybe a caprese salad all with choices of dressing and topping (parmesan, croutons, pecans, bacon bits etc). Garlic bread and french bread with different dips (e.g. bruschetta, ricotta & honey, mango salsa, aromatic green salsa). This menu seems a bit small, so spice it up by having a massive drink bar with different kinds of non-alcoholic exotic juices and allow your friends to make their own kinds of drinks served in fancy glasses.
For dessert? do a 'do it yourself' sundae bar - everyone loves ice cream!

My mom and I love that place! It sounds like it will be fun with the virgin bar and sound system. Definitely play music just so it's not dead quiet in the room (which it shouldn't be anyway with 30 people haha)
