one cup basmati rice and almost 2 cups water . bring to boil reduce heat and simmer covered till almost done. in the mean time rinse cooked kidney beans 1 cup add little butter salt one small green pepper minced ginger and add it to the almost cooked rice. cook till the water is absorbed. serve with hot butter on the top you will like it. urmil

1 onion diced
1 bell pepper diced
3 cloves of garlic crushed
1 sprig of scallions sliced
1 sprig of fresh thyme
2 celery leaves
1/2 small can of tomato paste
olive oil
2 cans of red beans - drained and rinsed

Sautee the first 7 ingredients in the olive oil. When everything softens and makes a thick seasoning paste, add the beans and 2 cans of water. Let simmer on medium heat for 35 minutes. Mash some of the beans if you want it thicker. Serve with cooked white or brown rice.

Buy the Zatarains boxed bean and rice form the grocery store. Add a green pepper and a small onion chopped up to it. It is quick and easy and it comes out so good!

I buy Zatarains, too. Get any kind, Red Beans and Rice is good, and then I usually add a can of black soybeans because I like the crunch, plus the proportion is better. with more beans. I then add tons of hot sauce, and sometimes sliced bananas. You won't know until you try it. It's great.

INGREDIENTS
1 (14 ounce) package boil in bag rice
1 1/2 pounds lean ground beef
2 (15 ounce) cans kidney beans, drained and rinsed
1 (24 ounce) jar picante sauce
1 1/2 tablespoons paprika
1 tablespoon chili powder
1/2 teaspoon crushed red pepper flakes
12 ounces shredded sharp Cheddar cheese



DIRECTIONS
Cook the rice according to package directions.
Place the ground beef in a large skillet over medium high heat. Saute for 5 to 10 minutes, or until browned and crumbly. Drain well and transfer meat to a large pot over low heat. Add the rice, beans, picante sauce, paprika, chili powder and crushed red pepper flakes. Stir well and let simmer for 20 minutes. Stir in cheese and let simmer for 10 more minutes.

Cuban Black Beans (aka Turtle Beans or Frijoles Negros) & Rice

Saute one sliced onion and two minced cloves of garlic in olive oil. Add one can of black beans and a teaspoon of chipotle seasoning. Simmer for a 1/2 hour. Serve on white rice and sprinkle with finely-chopped white onion such as Vidalia and a tsp of vinegar.

I'm a lazy cook, but I like beans and rice. Just throw together the following:

Rice (I like Jasmine rice)
Beans (I like pinto or black beans)
A little butter or margarine
Parmesan cheese

Simple and tasty! You can throw in some onions and carrots or other vegetables if you like.

RED BEANS AND RICE
1 lb. Louisiana red beans
(or black beans)
2 Smoked ham hocks or shanks
3 teaspoons minced garlic
8 oz. tomato sauce
1/4-cup vinegar
1 lb. smoked pork sausage
1 teaspoon Tabasco sauce


1/2-cup celery (chopped)
1-cup onions (chopped)
3 bay leaves
4 oz. tomato paste
1/4-cup brown sugar
2 tablespoons Worcestershire sauce
4 tablespoons WUN-DOE-MUS

PREPARATION:

Pick through the beans to remove bad beans. Rinse the beans once and soak in water overnight. Place beans, ham hocks, bay leaves, and garlic in a large pot and bring to a boil over high heat with water to cover. Reduce heat to a simmer. Sauté onions and celery in a small amount of butter or vegetable oil, and then add to pot. Add Tomato sauce, tomato paste, vinegar, brown sugar, smoked pork sausage, Worcestershire sauce, Tabasco sauce, WUN-DOE-MUS. Simmer for 3 hours until beans are tender. Remove one cup of beans and mash thoroughly. Add mashed beans back to the pot and continue cooking at a simmer for 15 minutes. Remove the bay leaves before serving. Serve over cooked long grain white rice.
NOTE: For extra flavor cook the long grain white rice in chicken stock instead of water. Use 2 cups of chicken stock to each cup of rice.
