moroccans cook with many different spices....more commonly i have found~cinnamon, ginger, paprika, ras el hanout(moroccan spice), saffron, cardamom, cumin, turmeric salt and pepper of course...also they cook with preserved lemons, smen(aged butter) and harissa as well...the ingredients of moroccan cuisine are simple...but they are brought together in a way that is very unexpected and unforgetable....
