Just that - it's actually the paper-thin layer of soya-bean milk cooled. If you leave a cup of boiled milk by itself for a few minutes, you'd notice a 'congealed layer; similarly with the so-called tofu skin. In China tofu skins are thousand-year old culinary practice.

Jaio Zi. That is the word for dumpling usually.

I have never heard of a tofu skin roll, but, I have heard of dumplings filled with chicken, mushrooms, and bamboo shoots.

Maybe the skin just tastes like tofu but is actually not...???

They're called 蒸餃 or zhengjiao (steam dumpling).
