Cheese is made by a fermentation process & some cheese are allowed to mold to give them there special flavors. If mold bothers you(allergic) eat fresh cheeses. They are not moldy.

cheese is not mold. it can be aged for many years. now blue cheese has a type of mold in it.

No, but there can be mold on cheese and it still be cheese. That's what blue cheese is.

No, cheese is curdled milk that may or may not have been aged by bacteria. Mold is occasionally added for specialty cheeses.
